Milling

Also written crushing, grinding. Each is a name for the same thing, which is why none of them has an entry of its own.

Definition

Breaking fruit down into pomace so that its cells rupture and its juice can be pressed out. It is the step that determines pressing yield more than any other.

In more detail

Milling also starts the clock on oxidation and on microbial activity. The instant cells are broken, polyphenol oxidase meets phenolic substrates and the pomace begins to brown, and the wild microflora of the fruit surface is mixed through the mass. Whether that is welcome depends on the intended style: traditional West Country practice accepts and uses it, while producers seeking a pale, fruit-forward cider mill cold, fast and under sulphite.
