Serving
Temperature, vessel and technique change what reaches the palate before any question of what the cider is. These are the mechanisms behind that, and what follows from them.
Almost everything in this section is a consequence of temperature and dissolved gas. Cold suppresses volatility, so less aroma reaches the olfactory epithelium; it also raises the solubility of carbon dioxide, so a cold bottle holds its gas and a warm one does not. Sweetness perception falls as temperature drops while acidity is barely affected, which is why the same cider reads as drier and sharper straight from the fridge than it does after twenty minutes in the room.
The rest is pressure. A bottle-conditioned cider contains several atmospheres of dissolved CO2, and both the way it is opened and the way it is poured are governed by what that gas does when the pressure is released. Where a genuine hazard exists — glass under pressure, a cork under a cage — it is stated as one.
