What is palate fatigue, and how many ciders can you assess before it sets in?
In short
Palate fatigue is a loose name for at least four distinct processes: olfactory adaptation, which is fast and recovers fast; astringency accumulation, which builds over samples and clears slowly; acid habituation, which raises the threshold at which sharpness registers; and alcohol, which impairs the judgement rather than the senses.
Because they have different causes they have different remedies, and the general-purpose one — a rinse of water and a biscuit — only addresses the least persistent of them.
For most people the practical limit for careful assessment is somewhere between six and twelve samples, and rather fewer where the ciders are tannic or strong.
Four different things
Olfactory adaptation is a receptor-level process: continuous exposure to an odorant reduces the response to it within tens of seconds, which is why a room stops smelling of what it smelled of when you entered. It recovers within a minute or two away from the stimulus, and it is specific to the compounds involved rather than general. This is the one that is genuinely fast in both directions.
Astringency accumulation is mechanical. Each tannic sample precipitates some of the salivary proteins that lubricate the mouth, and saliva takes minutes to replenish. Successive tannic samples therefore produce a mouth that is progressively drier and rougher, and astringency ratings for the same cider rise measurably across a session. Water helps a little; time helps more; nothing helps quickly.
Acid and sweetness habituation are adaptation at the taste rather than the smell level. After several sharp samples the threshold for detecting sharpness rises, so a moderately acidic cider tasted late in a flight is systematically under-rated for acidity. This is one of the strongest arguments for retasting the first sample at the end.
Alcohol is not a palate effect at all. Ethanol reaches the brain regardless of how carefully the tasting is conducted, and the faculties it degrades — attention, discrimination, self-criticism, memory for what was tasted twenty minutes ago — are exactly the ones a tasting depends on. It also flatters: a taster who has swallowed six samples is measurably more generous than one who has not.

How many samples
There is no single number, because the limit depends on what the ciders are and what is being asked of the taster. Formal sensory panels typically work with small numbers of samples in a session — often four to eight — precisely because the drift is measurable beyond that. Competition judging pushes considerably higher, with structured breaks, spitting throughout, and the explicit acknowledgement that late flights need re-checking.
Tannic ciders exhaust a palate faster than light ones, sweet ciders faster than dry, and strong ones faster than weak. A flight of eight low-tannin, low-alcohol ciders is a very different proposition from a flight of eight tannic West Country ciders at 7 or 8 per cent.
The honest signal that a session has gone on too long is that the notes get shorter and more generic. When every remaining cider is "quite dry, decent tannin, fine", the tasting has stopped generating information and is generating filler.
Designing a session that does not defeat itself
- Put fewer ciders in front of people than you think they can manage, and give them time.
- Break the flight into groups of three or four with real pauses between them, not a nominal thirty seconds.
- Spit, and provide somewhere obvious to spit; tasters who have to ask will not.
- Provide plain water at room temperature and something plain to eat, and put both within reach rather than on a side table.
- Retaste the first sample at the end and note whether the assessment has moved.
- Assess the most demanding ciders early, when the palate is capable of the discrimination they need.

The single most useful open cider dataset CiderHQ has found. The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones. Read in full on 2026-08-24 and transcribed into `data/trials/wsu-mount-vernon.ts`; four published figures were found to be impossible and are withheld there with their reasons.

Registered as a class rather than as one paper, because the mechanisms CiderHQ describes — tannin chain length driving the split between bitterness and astringency, salivary protein precipitation, enzymatic browning — are established across many studies rather than resting on any single one. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.
