Nothing in a sealed bottle stops changing. Storage decides how fast it changes, and in which direction — which is a question about temperature, light, oxygen and pressure rather than about a date on a label.

Three processes account for most of what happens to a cider in store. Oxidation continues wherever oxygen was dissolved at packaging or reaches the bottle through the closure, and its rate roughly doubles for every 10 °C. Light drives photochemical reactions that green and clear glass admit far more of than brown. And in a bottle-conditioned cider the yeast is still present and still viable, so warmth is not merely an accelerant but an invitation to refermentation and rising pressure.

Two of those changes are decline and one need not be. A cider that has thrown a deposit, lost a little carbonation and gained tertiary aroma has developed; a cider that has gone brown and flat-smelling has oxidised. Telling them apart is what these records are for, and where a change is a genuine fault it is described as one and linked to the fault it is.
