Cider comparisons
Two things people are told are the same and are not, or are told are different and are not. Each page says what actually separates them, and stops there.
CiderHQ holds 68 comparisons. Each one opens with the answer — two or three sentences saying what really divides the pair — and only then breaks the difference down dimension by dimension. If you read nothing but the first card on the page, you should still have the answer.
None of them picks a winner. Where two practices sit either side of a real trade-off, the page says what each optimises for and what each gives up. Where the difference is legal rather than physical, it says whose law, because the same two words can be a regulated distinction in one country and marketing in the next.
Not a recommendation, and not a ranking. The closing sections of each page are framed as when each is the relevant thing — which category applies, which term is accurate, which practice a producer is actually describing — rather than as advice about what to drink.

Cider vs apple juice
The same liquid at two stages: apple juice is what comes off the press, and cider is what that juice becomes once yeast has fermented its sugar to alcohol.
Cider vs beer
Cider is fermented fruit juice and beer is fermented from cereal starch, and that single difference drives the equipment, the chemistry and the legal category of each.
Cider vs perry
Cider is fermented from apples and perry from pears — but the pear brings sorbitol, citric acid and stone cells, which change how the drink ferments, how sweet it finishes and how it must be handled.
Perry vs pear cider
Perry is fermented pear juice, traditionally from perry pears; "pear cider" is a marketing term that arrived later and is often applied to pear-flavoured cider or to dessert-pear juice fermentations.
Cider vs wine
Both ferment fruit juice without a mash, which makes cider technically much closer to wine than to beer — but the fruit differs in sugar, acid type and tannin structure, and so does the finished drink.
Hard cider vs sweet cider
An American terminology problem: "cider" there has historically meant unfermented juice, so the fermented drink acquired the qualifier "hard". Elsewhere, cider is alcoholic by definition and neither term is needed.
Cider vs apple wine
Apple wine is apple juice fermented to a wine-like strength, usually by adding sugar before fermentation — which in most jurisdictions moves it out of the cider category and into made wine.
Cider vs calvados
Calvados is cider distilled and then aged in oak; the cider is the raw material, and the appellation rules govern both the cider that goes in and the spirit that comes out.
Cider vs cider vinegar
Cider vinegar is made from cider by a second, bacterial fermentation that oxidises ethanol to acetic acid — a deliberate industrial process, not simply what cider turns into if left alone.
Ice cider vs apple wine
Both reach a higher strength than ordinary cider, but ice cider concentrates the fruit’s own sugar by freezing before fermentation, while apple wine usually adds sugar to juice at natural concentration.
Cider vs cyser
A cyser is fermented from apple juice and honey together. It sits on the boundary between cider and mead, and which family claims it depends on whose framework is being used.
Cider vs mead
Cider ferments the sugar in apple juice; mead ferments honey diluted in water, which brings almost no acid, no tannin and very little yeast nutrient with it.
Cider vs pommeau
Pommeau is unfermented apple juice fortified with apple brandy and then aged in oak, so its sweetness is the fruit’s original sugar and its alcohol comes entirely from the spirit.

Cider fruit against the apples and pears most people know, and the classes against each other.
Cider apple vs dessert apple
Dessert apples are selected to be pleasant eaten raw; cider apples are selected for what their juice does after fermentation, which is a different and sometimes opposite target.
Bittersweet vs bittersharp
Both are high-tannin classes in the Long Ashton scheme; the difference is acid, and it decides whether the fruit can carry a cider on its own.
Perry pear vs eating pear
Perry pears are small, hard, tannic and frequently inedible raw; eating pears are bred for soft flesh and sweetness, and make a thin, low-tannin perry.
Cider apple vs culinary apple
Culinary apples are bred for acid and for flesh that breaks down in cooking; in cider terms most of them are sharps, which makes them genuinely useful in a blend rather than a substitute for it.
Sharp vs bittersharp
Both classes are acidic; the bittersharp is also above the tannin threshold, which changes what it does to a blend from lift alone to lift plus structure.
Sweet vs bittersweet
Both classes are low in acid; the bittersweet is above the tannin threshold and the sweet is below it, which is the difference between fruit that gives structure and fruit that gives only body.
Triploid vs diploid
A triploid apple carries three sets of chromosomes instead of two; its pollen is largely sterile, so it cannot pollinate its neighbours and needs two compatible diploids nearby to set a crop itself.
Orchards and how they are grown
Two ways of growing the same crop, with the trade-off stated rather than resolved.
Standard tree vs bush tree
A standard is a full-size tree on vigorous rootstock with a high clear trunk; a bush is a small tree on dwarfing or semi-dwarfing rootstock. The choice determines yield timing, lifespan, harvest method and what else can live in the orchard.
Traditional orchard vs modern orchard
A traditional orchard is a wide-spaced planting of large, long-lived trees with a grazed or grassed floor; a modern one is a dense planting of small trees managed for yield. They are different land uses that happen to grow the same fruit.
Classification schemes
Systems built in different countries for different fruit, which is why they disagree about the same apple.
English vs French classification
Both schemes sort cider fruit on acid and tannin, but the English one cuts it into four classes and the French into five, with a distinctly tannic amère family the English scheme has no name for.
Asturian vs Basque cider
Two neighbouring Spanish traditions that share wild fermentation, dryness and the pour, but differ in cultivar, in acidity, and in how the cider is served and drunk.
English vs Spanish classification
The Asturian scheme sorts fruit by acid and bitterness into five classes including a semi-sharp group with no English equivalent, on thresholds fitted to Asturian cultivars rather than English ones.
Long Ashton vs Asturian thresholds
Two schemes measuring the same two things on fruit from different climates, with cut points chosen for local populations — which is why a single cultivar can classify differently under each without either being wrong.
Law and protected names
Distinctions that exist in regulation, and which country the regulation belongs to.
PDO vs PGI
Both are geographical protections, but a PDO requires every stage from fruit to finished product to happen in the named area, while a PGI requires only that one stage does and that the reputation is linked to the place.
AOC vs IGP
AOC is the French national appellation and IGP the French designation matching the European PGI; both sit inside the same European framework, with AOC corresponding to AOP or PDO.
Words producers use
Terms that mean something precise, something regulated, or nothing at all — which is itself the answer.
"Real cider" vs "craft cider"
"Real cider" is a defined campaigning term with stated criteria; "craft cider" has no agreed definition and no body maintaining one, so the two are not comparable claims.
Single varietal vs blend
A single varietal is made from one cultivar and shows what that fruit does alone; a blend combines classes to reach a balance no single fruit provides. Blending is the older and more usual practice.
"Craft cider" vs "traditional cider"
"Craft" is a market positioning term about scale and intent; "traditional" is a claim about method and regional practice. Neither is defined in law, but they are claims about different things.
Austrian Birnmost vs Traditional Welsh Perry
Two perry traditions working from the same kind of fruit under opposite kinds of rule: Austria fixes what the finished drink must contain and leaves technique alone, Wales fixes what a maker may not do and states almost no numbers.
Scrumpy vs farmhouse cider
"Farmhouse cider" describes where and how a cider is made; "scrumpy" is a West Country vernacular term for rough, strong, still farm cider, and has been used both affectionately and dismissively.
Traditional method vs tank method
Both carbonate by a second fermentation, but the traditional method runs it in the bottle the cider is sold in and the tank method runs it in a pressure vessel before filtering and filling under pressure.
Vintage vs non-vintage
A vintage cider comes from the fruit of a single named harvest; a non-vintage cider blends across years to hold a house character steady. The difference is what the producer chooses to keep constant.
Everything else
Dry vs sweet
Dryness is about residual sugar, but perceived sweetness also depends on acid, tannin, alcohol, carbonation and, in perry, on sorbitol — so the label and the palate can disagree.
English vs French cider
Both use tannic fruit, but French practice organises itself around keeving and natural residual sweetness while English practice ferments out and finishes the cider afterwards.
English vs Spanish cider traditions
Two complete traditions with different premises: the English builds structure from tannic fruit and manages sweetness and carbonation; the Asturian and Basque build acidity and wild-ferment character and animate the drink at the moment of pouring.
Keeved vs fully fermented
Keeving strips nutrients out of the juice before fermentation so that the yeast starves before the sugar is gone, leaving natural sweetness; a fully fermented cider runs to dryness and is sweetened afterwards if at all.
Wild vs cultured fermentation
A wild ferment runs on the yeasts already present on the fruit and in the building; a cultured one is started with a selected strain in sufficient quantity to dominate from the beginning.
Back-sweetening vs arrested fermentation
Both produce a sweet cider, but back-sweetening adds sugar or juice to a dry cider afterwards, while arresting stops the fermentation before the sugar is gone.
Bottle-conditioned vs force-carbonated
Bottle conditioning makes the carbon dioxide inside the sealed bottle by fermenting a small amount of sugar there; force carbonation dissolves gas into the finished cider under pressure before packaging.
Cider vs fruit cider
A fruit cider has fruit other than apple added, as juice, purée or flavouring — which in most jurisdictions takes it outside the legal definition of cider and into a separate labelled category.
Cloudy vs clear
Cloudiness can be intentional suspended yeast and colloids, or it can be a pectin, starch, protein or microbial haze that is a genuine fault. The appearance alone does not tell you which.
European vs New World cider
European traditions are anchored by regional fruit, inherited method and in many cases appellation law; New World producers work without those anchors, which removes both the constraints and the inherited answers.
Fault vs style feature
Many of the compounds recorded as faults are present in well-regarded traditional ciders. What separates a fault from a feature is concentration, integration and whether the producer intended and controlled it.
Filtered vs unfiltered
Filtration removes suspended solids and, at fine enough grades, the organisms too; leaving it out keeps whatever is in suspension, including material that carries aroma and texture.
Pasteurised vs unpasteurised
Pasteurisation uses heat to kill the organisms that would otherwise continue changing the cider in the package; leaving it out keeps the cider alive, and with it both the potential to develop and the potential to spoil.
Still vs sparkling
Whether a cider carries dissolved carbon dioxide changes how its acid, tannin and aroma are perceived, and it determines how the cider must be packaged.
Sulphited vs unsulphited
Sulphur dioxide suppresses spoilage organisms and binds oxidation intermediates; working without it means relying on hygiene, low pH, temperature and vessel management instead.
Whole juice vs concentrate
Whole juice ferments the liquid as it came off the press; concentrate is juice with most of its water evaporated off, stored, and reconstituted before fermentation.
Apfelwein vs English cider
Hessian Apfelwein is a bone-dry, still, acidic cider from culinary and dessert fruit, often with Speierling added for tannin — a complete tradition whose premises differ from the English one at almost every point.
Barrel-aged vs tank-aged
Wood admits a slow trickle of oxygen and can contribute its own compounds; stainless steel admits neither, so it holds a cider as it was while wood changes it.
Brett as character vs Brett as fault
Brettanomyces produces volatile phenols that read as farmyard, leather and spice at low levels and as sticking plaster and horse at high ones — and it keeps working in the bottle, which is the real problem.
Draught vs bottled
The same cider behaves differently in a cask or keg and in a bottle, because the container determines carbonation, oxygen exposure, dispense and how long the cider is open before it is drunk.
Hand vs machine harvest
Hand harvesting picks or gathers fruit selectively; machine harvesting shakes and collects a block at once. Selectivity against speed, with orchard form deciding which is even possible.
Haze vs sediment
Sediment is material that has settled to the bottom of the container; haze is material that stays in suspension. The distinction matters because settled material is usually benign and a persistent haze usually is not.
Low-alcohol vs alcohol-free
Both are regulated descriptors with numerical thresholds, and the thresholds differ between jurisdictions — so the same drink can be alcohol-free in one market and merely low-alcohol in another.
Malolactic vs no malolactic
Malolactic conversion turns sharp malic acid into softer lactic acid, lowering total acidity and adding its own aromatic character; preventing it keeps the cider fresher and more acidic.
New England vs modern American cider
New England cider is a historical style — strong, often sweetened with sugar or raisins and fermented long — while modern American cider is a young and deliberately plural category built on whatever fruit and method a producer chooses.
Normandy vs Brittany
Two adjacent French cider regions with different emphases: Normandy’s appellations centre on keeved cidre and the calvados and pommeau built from it, while Brittany’s tradition runs to drier, more rustic cider with its own varieties and its own Cornouaille appellation.
Oxidation as fault vs oxidation as style
Controlled slow oxidation during maturation develops colour, softens tannin and adds complexity; uncontrolled oxidation strips fruit aroma, browns the cider and pushes it towards acetaldehyde and vinegar.
Perry vs poiré
The same drink in two languages and two traditions: English perry is usually fermented dry or lightly sweet and often still, while Norman poiré is keeved, sweet, low in alcohol and bottle-conditioned.
Pétillant vs fully sparkling
The difference is the amount of dissolved gas: pétillant carries a light spritz at low pressure, fully sparkling carries several volumes and requires a pressure-rated package.
Rack-and-cloth vs belt press
A rack-and-cloth press builds a stack of cloth-wrapped pomace cheeses and squeezes them in a batch; a belt press runs pomace continuously between converging belts. The difference is batch against continuous, and juice clarity against throughput.
Volatile acidity vs ethyl acetate
Volatile acidity is acetic acid, which tastes and smells of vinegar; ethyl acetate is its ester with ethanol, which smells of solvent and pear drops. They usually arrive together but they are different compounds with different thresholds.
West Country vs Eastern Counties cider
Two English traditions built on different fruit: the West Country on tannic bittersweets, the Eastern Counties on sharp dessert and culinary apples, giving a lighter, more acidic and often wine-like cider.
Freeze concentration vs cryoextraction
Both use cold to concentrate sugar, but freeze concentration freezes juice already pressed, while cryoextraction presses fruit that froze on the tree.
