Are cooking apples any good for cider?
In short
Culinary apples are bred high in acid, so under the Long Ashton scheme most of them classify as sharps. That makes them a real component rather than a compromise: a blend of tannic bittersweets with no acid is flabby and sits at a pH where spoilage bacteria are comfortable, and a sharp corrects both problems at once.
What they do not bring is tannin. A cider made entirely from culinary fruit is acidic, clean and structurally thin, which is a description rather than a criticism — eastern English and much continental practice builds deliberately on exactly that.
The cooking traits themselves, particularly flesh that collapses to a purée, are irrelevant to a press. What matters is the juice.

A misconception worth clearing up
