You can, and a great deal of cider is made that way — much of eastern England, most of Germany and a large share of North American production run on dessert and culinary fruit. What you get is a different drink: lighter, fresher, and without the tannin structure that defines West Country or Norman cider.

A misconception worth clearing up

Cider apples are a separate species, or are poisonous to eat.
What is actually the case: They are the same species as dessert apples, Malus domestica. A bittersweet is unpleasant raw because it is astringent and low in acid, not because it is harmful. Some are perfectly edible; they are simply not worth eating.
