Back-sweetening vs arrested fermentation
How do cider makers make a cider sweet without it refermenting?
In short
Back-sweetening ferments the cider to dryness and then adds sugar, apple juice or concentrate to a chosen level. Arrested fermentation halts the yeast part-way — by chilling, racking off the lees, sterile filtration or sulphiting — so the remaining sugar is the fruit’s own.
Both leave fermentable sugar in a cider that may still contain viable yeast, so both require a stabilising step: sterile filtration, pasteurisation, sorbate with sulphite, or reliable cold storage. Without one, the cider will referment in the package.
The difference in the glass is smaller than the difference in principle. Arrested fermentation retains the fruit’s own sugar balance and can leave more of the original juice character; back-sweetening gives precise, repeatable control over the final level and can use a sweetener chosen for its own contribution.

A misconception worth clearing up
This comparison exists partly because of the claim below, which is repeated often enough that most readers arrive holding it.
A sweet cider must have had sugar added to it.
What is actually the case: Not necessarily. Sweetness can be unfermented fruit sugar from an arrested or keeved ferment, and in perry a portion of it is unfermentable sorbitol that no yeast could have removed. Added sugar is one route among several.

Keeved vs fully fermented
Keeving strips nutrients out of the juice before fermentation so that the yeast starves before the sugar is gone, leaving natural sweetness; a fully fermented cider runs to dryness and is sweetened afterwards if at all.
