Whole juice vs concentrate
What is the difference between cider from whole juice and cider from concentrate?
In short
Whole juice cider ferments the pressed juice of that season’s fruit. Concentrate is made by evaporating most of the water from juice, which allows it to be stored and shipped cheaply and used at any time of year; water is added back before fermentation.
Concentration is a heat and vacuum process and it removes volatile aroma along with the water. Some concentrate is produced with aroma recovery and the recovered fraction added back, but the reconstituted juice is generally aromatically thinner than the original.
The commercial logic is decoupling: a mill running on concentrate is not tied to a harvest window, a local orchard, or a single season’s crop size. The cost is the aromatic loss and the loss of any link between the drink and a particular fruit. Several designations and definitions restrict or exclude concentrate for exactly that reason.

A misconception worth clearing up
This comparison exists partly because of the claim below, which is repeated often enough that most readers arrive holding it.
A high juice-content figure on the label proves the cider was made from fresh-pressed apples.
What is actually the case: Juice content is calculated on reconstituted concentrate as well as on pressed juice, so a full-juice claim is compatible with concentrate. Whether concentrate was used is a separate question, answered by the specification or by asking the producer.
