Hand vs machine harvest
Is cider fruit picked by hand or by machine?
In short
Cider fruit is not picked for appearance, so most of it does not need to leave the tree gently. Traditional practice lets the fruit drop or shakes it down, then gathers it from the orchard floor. Machine harvesting industrialises exactly that: a shaker loosens the crop and a sweeper or elevator collects it.
Hand gathering allows sorting as you go — rotten, mouldy and unripe fruit can be left behind, which matters for patulin control and for keeping mould taint out of the juice. Machine harvesting takes everything, so sorting has to happen afterwards on a grading line.
Orchard form largely settles the question. Standard trees, with fruit falling into long grass, are hard to harvest mechanically; bush orchards laid out in rows are designed for it. Neither approach is a proxy for quality, but each demands its own sorting discipline.

A misconception worth clearing up
This comparison exists partly because of the claim below, which is repeated often enough that most readers arrive holding it.
Cider apples are picked from the tree like dessert fruit.
What is actually the case: Most are not. Cider fruit is commonly allowed to fall or is shaken down and gathered from the ground, because bruising does not matter to a press and full ripeness matters a great deal. What must be excluded is rotten fruit, and that is a sorting question rather than a picking one.
