What it is
A family of machine methods that replaces the two hand operations — detaching the fruit and lifting it off the ground — with powered equipment. A trunk or limb shaker grips the tree and vibrates it so the crop falls, sometimes onto a catch frame and sometimes onto the sward; a sweeper then windrows the fallen fruit into a line and an elevator harvester picks the row up, separating leaves, twigs and some soil with air and rollers before delivering fruit into a trailer or bin. Over-the-row machines combine the operations in a single pass. It is the standard method in the planted bush orchards that supply large-volume cider.
Why it is used
- Large contract orchards must clear many hectares within the short window in which their contracted cultivars are at the right maturity, and hand gathering cannot move that fast.
- Labour for hand gathering has become both scarce and expensive in the countries where volume cider is made, and the machine converts a labour cost into a capital cost.
- A fast machine pass shortens the interval between fruit falling and fruit being under cover, which directly reduces the proportion of the crop colonised on the ground.
- Modern planting systems are laid out specifically for machine access, so the machine is not retro-fitted to the orchard — the orchard was designed around it.
How it works
- A shaker applies a controlled vibration whose frequency and amplitude are set to exceed the retention force of ripe fruit while staying below the point at which bark is damaged or immature fruit is stripped.
- Sweepers use rotating brushes or paddles to move fruit inward from the tree line into a windrow clear of the trunk, which is why the strip under the trees has to be mown short and kept free of prunings.
- The elevator harvester lifts the windrow on a conveyor and passes it over rollers and through an air stream, so leaves and light trash blow clear and fruit continues forward — but stones and clods of similar mass to an apple travel with the crop.
- Every transfer between conveyor, elevator and bin is an impact, and repeated small impacts produce the internal bruising that shows later as browning and as entry points for spoilage organisms.

Bulk bins, crates and pallets
Fruit arrives in sacks, crates or bulk bins, and the container decides how deep the fruit sits, how well it breathes, how long it can wait and how it will be tipped — which makes it a quality decision as well as a handling one.
Elevators, conveyors and hoppers
Fruit moves by gravity where the building allows it and by flume, belt, bucket elevator or auger where it does not; each method bruises the fruit to a different degree, and each is a machine capable of drawing a person into it.

Enzymatic browning
The rapid darkening of milled fruit and fresh juice as polyphenol oxidase converts phenolics to quinones, taking colour and some tannin structure with it.
Patulin contamination
Contamination of juice or cider with patulin, a mycotoxin produced by Penicillium expansum in rotting apples — a genuine food-safety question rather than a flavour one.
Mould taint
Musty, earthy, cellar-damp or rotten-fruit character carried in from mouldy fruit or from mouldy equipment, and a marker that the patulin question needs asking.

The machine and the orchard are a single design. Bush and intensive plantings on dwarfing or semi-dwarfing rootstocks give uniform trunk geometry for a shaker to grip, row spacing an over-the-row machine can straddle, and a smooth mown alley for a sweeper to work; the rootstock and orchard-system research from institutions such as NIAB EMR is in large part about producing trees that behave predictably under mechanical handling. None of that applies to a traditional standard orchard, where trunks are irregular, canopies are high and wide, the ground is uneven and often grazed, and the tree spacing was set for horses. A grower who buys a harvester for a standard orchard usually finds the machine cannot be used at all, which is why the two orchard types have effectively diverged into two harvest cultures.
What the machine changes about the fruit is more subtle than whether it gets picked up. Bruising rises: every fruit takes more impacts than a hand-gathered one, and although the bruise is invisible under an unbroken skin, the ruptured cells beneath it have already brought polyphenol oxidase into contact with hydroxycinnamic acids and procyanidins. For a maker who wants oxidised, mellow character that is not necessarily a loss, and French practice has long accepted a degree of pre-press oxidation. For a maker chasing fresh varietal aroma in a modern fruit-forward style it is a real cost, which is why some producers of that kind of cider specify hand or sward gathering even where they have machine-friendly plantings. The other consistent change is trash: soil, stones, sticks and grass arrive with the crop, and the washing and sorting installation downstream has to be built for it rather than bolted on.
The characteristic failure is running the machine on an orchard floor or a crop that is not ready for it. Shaking a block whose fruit is unevenly mature brings down a mixture that then has to be pressed as one; sweeping ground that has not been mown drags grass, prunings and mud into the windrow; working wet ground presses fruit into mud that then travels all the way to the mill. And because a machine harvests faster than an intake bench sorts, the temptation is to let the sort become nominal — which is precisely the point at which a mechanised operation starts delivering rot into the press at a rate no hand harvest ever could.

- Can you use windfall apples for cider — Traditional cider making relies on fruit gathered from the ground, and there is nothing wrong with it if it is sound. Rotten fruit is a different matter: brown rot carries patulin into the juice and should be discarded, not pressed.
