What is the difference between a standard and a bush cider orchard?
In short
A standard tree is grafted on a vigorous rootstock and trained with a clear trunk high enough to graze livestock beneath. It takes many years to come into full bearing and can then crop for a century or more. A bush tree is on dwarfing or semi-dwarfing rootstock, cropping within a few years, and is replaced on a much shorter cycle.
Each optimises a different thing. The standard optimises longevity and dual use of the land, at the cost of a long unproductive establishment and a harvest that must be shaken down and gathered from the ground. The bush optimises yield per hectare and speed to return, at the cost of a shorter productive life and a system that does not support the grazing, deadwood and epiphyte habitat a standard orchard develops.
Neither is a modernised version of the other in any simple sense: the two answer different questions about what an orchard is for, and a good many producers run both.

A misconception worth clearing up
This comparison exists partly because of the claim below, which is repeated often enough that most readers arrive holding it.
Bush orchards produce worse fruit than standards.
What is actually the case: Rootstock and tree form govern how much fruit a hectare produces and when, not the composition of the juice. Cultivar, season and site drive acid, tannin and sugar; the same cultivar on either system produces recognisably the same juice.

A traditional orchard is a wide-spaced planting of large, long-lived trees with a grazed or grassed floor; a modern one is a dense planting of small trees managed for yield. They are different land uses that happen to grow the same fruit.
