What it is
Picking fruit directly from the branch, one apple or pear at a time, and placing rather than dropping it into a picking bag or bin. The fruit never touches the ground, arrives with its stalk attached and its skin unbroken, and can be kept separate by cultivar and by tree. It is the most expensive way to get a cider crop in and the only one that reliably delivers fruit sound enough to be held for months, which is why it survives for the small share of cider and perry production where the fruit’s condition on arrival is worth paying for.
Why it is used
- Where fruit must be stored for weeks or months before it is processed, an intact skin is the whole defence against mould entry, and only hand picking delivers it consistently.
- Single-varietal work needs the fruit of one cultivar kept genuinely separate, which gathering from a mixed sward cannot guarantee.
- Fruit that will be frozen and thawed for ice cider has to be sound going in, because any pre-existing lesion becomes a rot site during the long hold.
- In tall standard orchards on uneven or waterlogged ground, machine gathering is impractical and hand picking or hand gathering is the only option available.
How it works
- The picker lifts and rolls the fruit so the stalk separates at the abscission layer, leaving the spur — and next year’s fruit bud — undamaged and the stalk on the fruit rather than a torn wound where it was.
- Placing rather than dropping avoids the impact bruising that ruptures cells beneath an unbroken skin, releasing polyphenol oxidase and substrate together and starting browning inside the fruit.
- An intact cuticle and an intact stalk scar leave no wound for Penicillium expansum to enter, which is the single largest determinant of whether a stored crop stays sound.
- Because pickers see each fruit individually, an initial sort happens on the tree, and obviously rotten or damaged fruit is left rather than being carried into the bin.

Penicillium expansum
The blue mould of stored apples and the principal producer of patulin, the one genuine chemical safety issue that rotten cider fruit raises.

The economics decide where this method is found. A tonne of bittersweets going into a farmhouse press is worth a fraction of a tonne of dessert fruit going into a supermarket, and hand picking costs roughly the same in either case, so West Country and Normandy cider orchards have overwhelmingly not used it — the fruit comes off the sward instead. Where it does persist is at the two ends of the value range: fruit intended for a named single-varietal bottling, where identity has to be provable, and fruit destined for ice cider in Québec and the cold-climate North American orchards, where the crop is picked in autumn and then held sound until the winter freeze does its work. Vermont and Québec producers describe the picking standard for that fruit in dessert-fruit terms rather than cider terms.
The technique is also the default where the orchard makes anything else impossible. Old standard trees on rough or grazed ground do not present fruit to a sweeper; the sward is tussocky, the ground is often wet by the time the late cultivars come in, and a machine that works in a modern bush planting simply cannot operate. In those orchards the practical distinction between hand harvesting and hand gathering from the ground is smaller than it looks, and the same crew does both in the same day: some fruit is taken off the tree, the rest is shaken down and picked up. Perry pears push in the same direction, because the interval between a pear being hard and being sleepy at the core is short enough that leaving the crop lying is a real cost.
Done badly, hand picking loses most of its advantage. Fruit tipped rather than poured from bag to bin bruises on the way in; bins filled to the brim crush the bottom layer when they are stacked; fruit left standing in full sun in a bin warms and begins respiring hard before it reaches the store. The other common error is treating a hand-picked crop as automatically clean and skipping the intake sort, when in fact pickers working fast miss lesions on the underside of fruit and a single overlooked rot in a bin has weeks in store to spread to its neighbours.
