Pacific Northwest
Washington and Oregon, with the WSU Mount Vernon programme behind it. Maritime, cool-summered, and the closest North American analogue to the English West Country — which is why European cider cultivars were planted there rather than east of the Cascades.
New England and New York
The oldest continuous cider ground in the United States, with the University of Vermont and Cornell programmes. New York also holds the USDA national apple collection at Geneva, which is where the largest single-season cider characterisation in this site’s data was measured.
Virginia
The mid-Atlantic, and the region whose historic cider culture was most completely lost. Harrison, the highest-phenolic cultivar in the site’s Virginia dataset, is a rediscovery rather than a survival.
Michigan
A large apple-growing state with a cider industry built on dessert and processing fruit rather than on cider cultivars, which is a materially different starting point from the other four.
Québec
Drawn above the border and in a different fill because it is a separate legal system as well as a separate country. It holds Cidre de glace du Québec, the only protected cider name in North America.

These are not one region with local variations. They have different climates, different orchard bases, different research institutions and different histories, and a reader who treats "American cider" as one thing will get every one of them wrong.

Climate and land

The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.

New York’s fruit growing depends almost entirely on water bodies moderating an otherwise severe continental climate. The Lake Ontario shore, the Finger Lakes and the Hudson Valley all benefit from large thermal masses that delay autumn cooling, reduce winter minima and — critically — retard spring bud break enough to carry bloom past the worst frost risk. Away from those moderating influences the state is too cold for reliable commercial apple growing. Within them the season is long enough for mid and late cultivars to ripen properly, with warm summers that build sugar and cool September and October nights that preserve acid and colour. Rainfall is distributed through the year, with summer humidity high enough to sustain scab, fire blight and summer rot pressure. Winter minima remain the limiting factor for tender cultivars, and lake-effect snow cover on the western side gives some root protection that inland sites lack.

Soils

Orchard soils are glacially derived and varied: gravelly, well-drained tills on the drumlin ridges south of Lake Ontario, deeper silt loams in the Hudson Valley, and shale-derived slopes around the Finger Lakes. Drainage is the operative variable — apple roots on the heavier lakeplain soils suffer in wet springs, and the ridge sites are preferred for that reason.

About New York State

New York is the American cider region with the deepest documented history and the strongest present-day research base, and the two are connected. The Hudson Valley was producing and exporting fruit before independence, the state’s nurseries distributed grafted cultivars across the continent through the nineteenth century, and the agricultural experiment station has been analysing fruit since long before cider became a commercial category again. A reader looking for American cider evidence rather than American cider folklore will find more of it here than anywhere else.

Geographically the state is not one region but several, and they behave differently. The Lake Ontario shore is a large-scale commercial fruit district whose economics are set by the fresh and processing markets. The Hudson Valley has the oldest orchard history and the closest relationship to the New York City market. The Finger Lakes overlaps with an established wine industry and has absorbed a good deal of its vocabulary and expectations. What unites them is that apples are grown here at industrial scale, so cider makers have access to fruit and to juice on terms that producers in smaller states do not.

The fruit itself is high-acid. Warm summers build reasonable sugar but cool autumn nights hold malic acid in the fruit, so New York juice typically presses out sharper than West Country or Norman juice. Producers who want tannin plant it deliberately — the state has meaningful acreage of English and French bittersweets — or work with American russets, which supply phenolic weight without the bittersweet extreme.

The 2013 farm cidery licence was a decisive structural change. By allowing producers using New York fruit to sell directly on site, it made a small orchard-based operation viable in a way it had not been, and the number of producers rose sharply afterwards. It is a clear case of cider geography being shaped by licensing law rather than by climate or tradition, and it is worth stating plainly because the same pattern recurs across American states with different outcomes.
