Aroma

No aroma descriptors are recorded for Baldwin, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

Humid continental, with a hotter summer and a colder winter than any European cider region. The compiler suggests the growing conditions may be part of why the phenolic figures sit so far below the English ones, and is careful not to claim it.

About Baldwin

For most of the nineteenth century Baldwin was simply what a New England apple was. It dominated the orchards of Massachusetts, New Hampshire and Maine so completely that a farm cider made anywhere in the region would have been mostly Baldwin, not because anyone had chosen it as cider fruit but because there was nothing else in quantity. That is the normal condition of North American cider: the blend was decided by the orchard, and the orchard was decided by the market for fruit.

The winter of 1933–34 ended it. An extreme cold event killed Baldwin trees across the northeast, and the replanting that followed used hardier cultivars — McIntosh above all. A cultivar that had been ubiquitous became a heritage curiosity within a decade. It is a useful corrective to any account of cider fruit that treats the composition of an orchard as a slow cultural inheritance; sometimes it is decided in a single February.

As juice, Baldwin is decent and unremarkable. It has moderate acid near the sharp boundary, respectable sugar, a slightly fuller texture than its neighbours and no tannin at all. In a modern heritage blend it is a base rather than a flavour, and it does that job well. It is also triploid, so a block of it needs pollinators that can service it and cannot service them in return.
