The Beer Judge Certification Program lists New England cider among its historical categories, with stated expectations for strength, dryness and the use of sugar adjuncts. That is a judging framework written to make competition entries comparable; it is not a legal designation and it codifies a practice that was never uniform.
What makes it this style
- The cider is strong — well above ordinary cider strength — and fully dry.
- The gravity was historically raised with sugar, molasses, maple syrup or raisins, which the competition framework recognises as characteristic rather than as adulteration.

About New England cider
Cider was the ordinary drink of colonial and early republican New England, made on farms from seedling orchards planted from pips rather than from grafted named varieties. The scale of it is easy to underestimate: apples were the region’s most reliable crop for fermentation in a climate that grew barley poorly, and the cider was strong, kept in barrels, and drunk through the year.
Strength was a preservation strategy as much as a preference. A cider at eight or ten per cent survives a cellar better than one at five, and the cheapest route to that strength in a colonial economy was to add fermentable sugar to the must — molasses from the West Indies trade, maple sugar from the woodlot, or raisins. That practice is what the competition framework now recognises as characteristic, and it is worth being clear that it was an economic and practical choice rather than a flavour tradition.
The long barrel maturation that followed produced the other half of the character. Slow oxidation over a year or more in a partly filled cask develops acetaldehyde and, with time, a nutty, sherry-like quality that has no counterpart in fresh cider. Combined with high alcohol and complete dryness, the result is a serious, austere drink that is much closer in feel to a fortified wine than to a modern cider.
The tradition largely disappeared. Prohibition removed the market, the temperance movement removed a good deal of the orchard, and the fruit and knowledge that supported it went with them. What exists now is a reconstruction, made by producers working from historical accounts and from the competition description, using surviving heirloom cultivars such as Baldwin, Roxbury Russet and Golden Russet. That reconstruction is legitimate and interesting, and it should be described as such rather than as an unbroken line.
The role of the BJCP framework here deserves naming precisely. A competition guideline exists so that judges can compare entries consistently; it necessarily fixes as a specification something that was historically diffuse. Reading the guideline as a description of what colonial New Englanders actually made is an error, and reading it as a modern convention for a revived style is accurate.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- A cultivar base that includes American heirlooms alongside European ones.
- Strength, which is often higher than a European cider — the historic practice included raising the gravity.
- Acid and a fresher register than a West Country cider. American heirloom fruit generally carries more acid and less tannin than Norman or Somerset bittersweets, so this style reads brighter and firmer where an English one reads soft and drying.
- What the added fermentables left behind. Raising the gravity with sugar, molasses or raisins produces alcohol without adding body, so a high-strength example can feel curiously lean — and where raisins were used there is often a faint dried-fruit note that the apples did not put there.
What gets misread
- Reading it as English cider transplanted. The fruit and the history diverged early: the seedling orchards of colonial New England produced their own cultivars, and the practice of raising the gravity has no English parallel.
- Assuming cider means the fermented drink in an American context. It usually does not, and hard cider is the qualifier.
Around 12 °C in a stemmed glass. This is a strong, dry, oxidative cider and it is closer to a wine in what it asks for: enough warmth to carry the aroma, not so much that the alcohol reads as heat.

Sugar addition
Adding sugar or apple juice concentrate to raise potential alcohol before fermentation, and the regulatory and compositional consequences of doing so.
Wild fermentation
Letting the microflora already present on the fruit and in the press house carry the ferment, in a succession rather than as a single organism.
Barrel ageing
Holding cider in wood — which may mean an old neutral vat used simply as a vessel, or fresh or spirit-seasoned oak used as a source of flavour, and the two are not the same operation.
Oxidative maturation
Ageing a cider with a deliberate, measured oxygen supply so that tannins polymerise and soften and an aldehydic character develops on purpose, which is not the same thing as the oxidation fault.
Racking
Moving cider off the sediment it has thrown, which both cleans the liquid and — by taking yeast and nitrogen away with the deposit — slows what is left of the ferment.
Bottle maturation
What happens to a cider after it is sealed in glass — which for most ciders is slow decline rather than improvement, and saying so is more useful than implying otherwise.

Oxidation
The cumulative effect of oxygen on finished cider: fruit aroma flattens, colour deepens towards amber, and a bruised-apple or sherry-like character replaces the fresh one.
Acetaldehyde excess
A bruised-apple, green-nut or sherry aroma from acetaldehyde, produced by oxidation, by film yeast, or left behind by a ferment that was interrupted.
Volatile acidity
The measurable fraction of acidity that can be steam-distilled off, dominated by acetic acid and read as vinegar sharpness in the nose and a hard, hot finish.
Atypical ageing
A cider that loses its fruit unusually early and develops a flat, faintly acrid or naphthalene-like character — a syndrome described in white wine and less firmly established in cider.

- How does cider ferment — Yeast consumes the sugar in apple juice and produces roughly equal masses of ethanol and carbon dioxide, along with the esters and higher alcohols that give cider much of its aroma. In a wild ferment several yeast species take turns before *Saccharomyces* finishes the job.
- What is ice cider — Ice cider is made by concentrating apple juice by freezing before fermentation, so that the ferment starts from a very high sugar level and stops sweet. It is a Quebec speciality with a protected definition there.
- Can you fix a cider that has gone vinegary — Not really. Volatile acidity cannot be removed at small scale, and blending it away only dilutes it. The realistic options are to accept it, to blend a lightly affected batch into a much larger sound one, or to let it finish becoming vinegar.
- Do you add sugar when making cider — You do not have to: apple juice already contains enough sugar to ferment to roughly five or six per cent. Sugar is added when a maker wants more alcohol than the fruit will give, and in some jurisdictions how much may be added is restricted.
- Does cider get better with age — Some does. Tannic, dry, bottle-conditioned ciders and ice ciders can gain for several years. Light, fruit-driven and commercially filtered ciders lose their aroma and do not gain anything in exchange.

Opened on 2026-08-24, and the edition matters. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.
