The Beer Judge Certification Program lists applewine as a judged style with expectations for strength and character; that is a competition framework, not a legal one. Separately, UK and US tax rules move a fermented apple drink out of the cider class above a stated strength, which is a fiscal boundary and not a description of flavour.
What makes it this style
- The finished alcohol is at wine strength, well above what ordinary apple juice supports on its own.
- The extra alcohol comes from a raised starting gravity — added sugar, concentrate or freeze-concentrated juice — or from a very high-gravity juice.
- It is fermented dry or nearly dry, so the strength is not masked by sweetness.
- It is presented as a wine: still, in wine format, and generally intended to be kept.
What varies inside the category
Every style covers a range. This is what legitimately differs between two examples that are both correctly called by this name.
- How the gravity was raised. Sugar dilutes the fruit character relative to the alcohol; concentrated juice does not.
- Whether honey is used, in which case English-language homebrewing vocabulary calls it cyser and treats it as a separate thing.
- Tannin, which depends on whether cider fruit or dessert fruit was used and is frequently low.
- Where the tax line falls, which differs by jurisdiction and changes what the product may legally be called.
- Balance. Alcohol without matching acid and tannin reads hot and hollow, and this is the category’s standing difficulty.

About Apple wine
Apple wine sits at a boundary that is drawn by tax authorities rather than by taste. Both the UK and the United States define cider partly by strength, and a fermented apple drink above the stated ceiling stops being cider for fiscal purposes and becomes something else — made-wine in British usage, wine in American. That reclassification says nothing about how the drink is made or what it is like; it is a revenue distinction that has, over time, hardened into a category name.
Technically the challenge is that apple juice does not naturally contain enough sugar to reach wine strength. Ordinary pressed juice ferments out somewhere between four and eight per cent alcohol depending on the fruit and the season. To go higher the maker must add fermentable sugar, add concentrate, or remove water. Each choice has a cost: cane or beet sugar contributes alcohol and nothing else, so the fruit character is proportionally diluted; concentrate carries some cooked character; freeze concentration is expensive and, followed by a full ferment rather than an arrested one, is an unusual use of a costly juice.
The result is a drink that must earn its strength. Ethanol at wine levels is perceived as warmth and, in the absence of matching acid, tannin or residual sugar, as a hollow heat that a well-made cider at six per cent does not have. This is why the successful examples tend to use acidic or tannic fruit rather than the sweetest available, and why extended ageing is common: time in tank or bottle allows the harsher fusel notes of a stressed high-gravity ferment to soften.
The competition treatment is useful here because it is explicit. The BJCP guidelines describe applewine as a judged category with its own strength expectations and its own faults, and being explicit about the framework matters: a cider judged against those descriptors in a competition is being measured against a document written for judging, which is a different exercise from being measured against a regional tradition or a legal specification.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Alcohol, first, because it is the defining difference. An apple wine carries wine-range strength and the warmth that comes with it.
- Whether the strength came from the fruit or from added sugar. Chaptalised apple wine often reads thin under the alcohol, because the sugar brought nothing but ethanol.
- How the acid holds up. At wine strength a cider-range acidity reads low, and apple wines are frequently flabby for this reason alone.
What gets misread
- Treating it as a strong cider. It is a different category with a different legal position in several markets, and in the UK a drink above the cider strength band is taxed as made-wine.
- Reading added sugar as adulteration. It is the ordinary method for the category and is stated rather than hidden.
Around 12 °C in a stemmed glass. At wine strength the alcohol carries aroma readily and also reads as heat if it is served too warm, so this sits above cider temperature and below room temperature.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Apfelwein — The name is a false friend. Frankfurt Apfelwein is a dry cider at ordinary cider strength; apple wine as a category is a stronger drink made deliberately.
- Ice cider — How the strength and sweetness were reached. Ice cider concentrates the juice by freezing; apple wine ferments a sugared juice out.
- Cider above the duty threshold — A legal boundary rather than a sensory one. In the UK the category a drink falls into changes at a stated strength, and the drink either side of it can be identical.

Nutrient addition
Supplementing a characteristically nitrogen-poor juice so that yeast can complete fermentation without producing sulphide or stalling.
Yeast selection
Choosing which cultured strain to pitch, on the basis of the temperature, nitrogen, alcohol and aroma behaviour that separates one commercial yeast from another.
Fermentation temperature control
Managing the temperature at which a ferment runs, which sets not only how fast it goes but which aromatics survive it and what the finished cider tastes of.
Tank maturation
Resting cider in stainless steel or a lined vessel, where the point of the container is that it contributes nothing and admits almost no oxygen.
Bottle maturation
What happens to a cider after it is sealed in glass — which for most ciders is slow decline rather than improvement, and saying so is more useful than implying otherwise.

Stuck fermentation
A fermentation that has stopped before the sugar is gone and will not restart, leaving a sweet, low-alcohol cider that is vulnerable to everything.
Nitrogen deficiency character
The set of characters a nitrogen-starved fermentation produces together — sulphide, a stalled or dragging ferment, harsh higher alcohols and a thin, hard cider.
Thin body
A cider with no weight or texture in the mouth, most often from over-watered pomace, low-gravity juice or a blend with nothing to give it substance.
Oxidation
The cumulative effect of oxygen on finished cider: fruit aroma flattens, colour deepens towards amber, and a bruised-apple or sherry-like character replaces the fresh one.
Atypical ageing
A cider that loses its fruit unusually early and develops a flat, faintly acrid or naphthalene-like character — a syndrome described in white wine and less firmly established in cider.

Ice cider
Cider made from apple juice concentrated by freezing, fermented slowly and stopped while a large residual sugar remains, giving a dessert-strength drink of high acid and high sweetness.
New England cider
A strong, dry, oxidative American cider historically raised in gravity with sugar, molasses or raisins and matured in wood, now defined chiefly as a competition category.

- What temperature should cider ferment at — Most cider is fermented cool, commonly between about 12 and 18 °C. Cooler ferments keep more fruit aroma and run slower; above the low twenties the cider tends towards hot, solvent-like higher alcohols.
- What yeast should i use for cider — CiderHQ does not recommend brands. The choice is between a neutral, reliable strain that lets the fruit show, an aromatic wine strain that adds its own esters, and no addition at all. Alcohol tolerance, cold tolerance and nitrogen demand are the properties worth comparing.
- Why did my cider stop fermenting — The usual causes are a shortage of yeast-available nitrogen, a temperature that has dropped, too much sulphite at the start, or a yeast that has reached its alcohol limit. Check the gravity before assuming anything is wrong: many ciders simply finish.
- What is ice cider — Ice cider is made by concentrating apple juice by freezing before fermentation, so that the ferment starts from a very high sugar level and stops sweet. It is a Quebec speciality with a protected definition there.
- Do you add sugar when making cider — You do not have to: apple juice already contains enough sugar to ferment to roughly five or six per cent. Sugar is added when a maker wants more alcohol than the fruit will give, and in some jurisdictions how much may be added is restricted.
- Does cider get better with age — Some does. Tannic, dry, bottle-conditioned ciders and ice ciders can gain for several years. Light, fruit-driven and commercially filtered ciders lose their aroma and do not gain anything in exchange.

Opened on 2026-08-24, and the edition matters. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.

Written by a food chemist who worked at Long Ashton on apple phenolics. Unusual among specialist cider writing in that it is primary-research-adjacent: the author is describing work he did, and cites the literature. This is why it is registered at tier 1 for chemistry while a general cider book is not.
