Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
Ontario’s fruit belts exist because of the Great Lakes. Open water holds heat into the autumn and releases cold slowly in spring, so the Niagara peninsula, the north shore of Lake Ontario and the Georgian Bay shore all enjoy a longer frost-free season than the surrounding continental interior and a delayed bud break that reduces spring frost losses. Summers are hot and humid, which drives sugar accumulation fast and compresses harvest, and which also creates heavy disease pressure — apple scab and fire blight are the defining orchard problems, and management is intensive. Winters remain genuinely cold away from the lake influence, so cold-hardiness still constrains what can be planted. The net effect on juice is high sugar with moderate acid and very little tannin, because the fruit grown is dessert fruit; the province’s ciders are correspondingly light-bodied unless the maker blends in acid or tannin from elsewhere.
Soils
Lacustrine clays and sandy loams on the old lake plains drain and warm differently within short distances, and orchard siting within the fruit belts is largely a matter of finding the better-drained soils on slightly raised ground.
The orchards
How the fruit is actually grown here — tree form, planting, what else the ground is used for, and who owns it.

History
How cider making here came to take the shape it has.
- Apple growing was established across southern Ontario in the nineteenth century by settler farming, and the province became Canada’s principal apple producer, oriented from the start to fresh eating, storage and processing rather than to fermentation.
- Farm cider was made domestically in the nineteenth century but did not survive as a commercial category through the twentieth; the temperance movement and provincial control of alcohol sales left no continuous cider trade.
- The modern sector dates from the 1990s and, more substantially, from around 2010, when changes in licensing and a general expansion of craft drinks made small-scale commercial production viable.
- Growth since then has been driven by the same forces as elsewhere in North America — craft beer drinkers, gluten-free positioning and canned formats — rather than by any recovery of an older tradition.
Culture
What the drink is for here, and the occasions and rooms it belongs to. This is not decoration around the cider — in several of these places it is the part that decides how the cider is made.

About Ontario
Ontario grows more apples than any other Canadian province and has done so for well over a century, but its cider sector is young. The orchards were planted for eating, storage and processing, and the province’s alcohol history — temperance, then a state monopoly on sale — left no commercial cider trade to inherit. What exists now was built from about 2010 onwards.
The province’s orchard geography is worth understanding on its own terms. Fruit growing concentrates in narrow belts along the Great Lakes, where open water delays bud break in spring and extends the season in autumn. Away from that lake influence the winters are too cold and the spring frosts too reliable for commercial orcharding.
Because the fruit is dessert fruit, Ontario cider starts from juice that is high in sugar, moderate in acid and essentially free of tannin. Makers respond in the usual ways: blending in sharp or bittersweet fruit where they can get it, adding fruit and hops, or working with clean cool fermentations and carbonation. The result is a modern category rather than a regional style.
Structurally, the sector is shaped by the liquor board. Most retail passes through it, which favours producers who can supply consistently and in volume; farm-gate and on-site sales are where small makers retain control, and that ties a good deal of Ontario cider to agrotourism and to the province’s established wine routes.
