The UK cider trade operates a voluntary labelling scale on which medium sits between dry and sweet; France sets demi-sec by measurement in its cidre decree. The two are not interchangeable, and neither governs the other’s market.
What makes it this style

What varies inside the category
Every style covers a range. This is what legitimately differs between two examples that are both correctly called by this name.
- Whether the sugar is residual apple sugar, added juice or concentrate, or a non-fermentable sweetener — each tastes different at the same reading.
- The stabilisation route: sterile filtration, pasteurisation and sorbate each leave their own signature, and sorbate in particular can be detected.
- How much acid or tannin is carried alongside. Sugar without structure reads as cloying; the same sugar against firm tannin reads as balanced.
- The width of the band itself. Medium covers a wider sugar range than either of its neighbours, so two ciders can share the word and disagree entirely.

About Medium cider
Medium is the sweetness level at which most cider is actually sold in Britain and Ireland, and it is the level least well served by the vocabulary available to describe it. The word marks a zone rather than a point, and the zone is wide. At its dry edge a medium cider is a dry cider with the corners taken off; at its sweet edge it is difficult to distinguish from a restrained sweet cider. Producers work to a house position within that zone and drinkers calibrate to the brands they know, which is why the same word can produce genuine disagreement between two people describing the same glass.
Two quite different production routes arrive here. The older is to stop the fermentation before the sugar is gone — historically by repeated racking off the yeast into clean vessels, a slow starvation of the ferment that also strips nitrogen, and which produces a cider whose sweetness is the fruit’s own. The modern industrial route is to ferment dry, then blend sweetness back in and stabilise the result. The second is far more repeatable and is the reason a national brand tastes the same in March and October; the first is less controllable and, when it works, leaves a rounder texture because the sugars retained are the fruit’s glucose and fructose in the proportions the fruit supplied.
Stabilisation is the technical heart of the category and the part that most affects flavour. Live yeast plus added sugar in a sealed pack is a bottle bomb waiting to happen, so a back-sweetened cider must be filtered sterile, pasteurised, or protected chemically. Each choice costs something. Sterile filtration removes body along with the yeast. Pasteurisation can flatten aromatics and, pushed too far, contributes a cooked note. Potassium sorbate is effective but can be perceived as a distinct off-flavour, and if lactic bacteria act on it the result is unmistakable and unpleasant.
For the drinker, the practical value of the word is narrow but real: it predicts that sweetness will be present and that the cider will not challenge on acid or tannin alone. It predicts almost nothing about origin, fruit or method. A medium cider made from Somerset bittersweets and a medium cider made from dessert-fruit concentrate share a label position and very little else, and the honest reading of the term is as a single coordinate on a much larger map.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Whether the sweetness is integrated or sits on top. A cider fermented to a medium finish and one sweetened back to it read differently: the second often has a discrete sugar note the first does not.
- What the sugar is doing to the acid. Sweetness suppresses perceived sharpness, so a medium cider can carry considerably more acid than it tastes of.
- Whether the fruit survives the sugar. This is the sweetness level at which a thin cider is most easily disguised.
What gets misread
- Treating medium as a fixed point. It is the widest band in the British scale and covers ciders that taste noticeably different from one another.
- Reading a demi-sec as a medium. The French term sits inside a measured system and the British one does not; they are not translations.
Around 8–10 °C. Cold suppresses sweetness perception while leaving acid untouched, so an over-chilled medium cider reads as an unbalanced dry one — the sugar is still there and the palate has stopped registering it.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Cidre demi-sec — Whether a number stands behind the word. Demi-sec is defined by measurement in the French decree; medium is a position on a voluntary trade scale.
- Keeved cider — Texture at the same sugar reading. A keeved cider is sweet because the ferment was starved and stopped; it carries a rounder body and a lower alcohol than a back-sweetened medium at the same analysis.

Back-sweetening
Adding sugar, juice or concentrate to a cider that has fermented dry — a straightforward adjustment that leaves the drink microbiologically unstable until something is done about it.
Arrested fermentation
Deliberately halting a ferment while sugar remains, to obtain natural sweetness from the fruit rather than from an addition — and accepting the instability that follows.
Sterile filtration
Membrane filtration at a rating that retains viable yeast and bacteria, which is what allows a sweet cider to be shelf-stable without heat or preservative — provided the filling that follows is aseptic.
Sorbate stabilisation
Adding potassium sorbate to prevent yeast from restarting a fermentation in the package — an inhibitor rather than a killer, and one that must never be used without sulphite.
Pasteurisation
Heating cider enough to inactivate the organisms that would spoil it, either in the sealed package or in-line before filling, at a measurable cost in fresh aroma.
Food
Interactions rather than suggestions. Each explains the mechanism, so you can extend it to a dish that is not listed.
- Barbecue ribs — A glazed rib is a sweet dish, and a drink markedly less sweet than it reads as sour: this is the same adaptation effect that governs dessert. Residual sugar keeps the cider in balance while its acid works on the fat.
- Ham — Cured ham is a salt problem before it is a fat problem, and sweet–salt suppression is the mechanism that does most; the meat’s high protein content simultaneously absorbs whatever tannin the cider carries.
- Pulled pork — Where the sauce is sweet, the sweetness floor rises and an off-dry cider is needed to avoid reading as sour.
- Thai green curry — Green curry is hot, and residual sugar measurably lowers capsaicin burn; the fish sauce makes it very salty, which the same sugar suppresses, and the coconut fat gives the acid work to do.
- Anchovies — Anchovy is close to the salt maximum in ordinary food, and sweet–salt suppression is the only mechanism that lowers it; the fish also makes the cider read markedly drier than it measures.
- Biryani — Ghee and layered meat give a substantial fat load that acid clears, the whole spices share a warm aromatic register with a cider’s own spice notes, and a little sugar covers whatever chilli the version carries.
- Burnt ends — Twice-sauced and twice-smoked, these are simultaneously the sweetest and the fattest thing in the barbecue section; the cider needs sugar to stay in balance and acid to clear the fat.
- Cheshire — Cheshire is the saltiest of the crumbly British cheeses, and sweet–salt mixture suppression is directly useful: residual sugar lowers the perceived salinity, while the cheese in turn makes the cider read drier than it measures.
- Chutney — Chutney is deliberately both sweet and sour, which is an awkward combination for a drink: it exposes a dry cider’s acidity and flattens a sweet cider’s sugar. An off-dry style with real acidity is the position that gives up least.
- Feta — Feta is both very salty and genuinely acidic, an awkward combination: it needs sugar for the brine and acidity to avoid being made flat by the cheese’s own sourness. A medium cider from sharp fruit satisfies both.
- Gammon — Gammon is salty enough that suppression is the first requirement, and the fat cap and frying fat give the acid something to work on.
- Halloumi — Brined halloumi is among the saltiest things a cider is likely to meet, and sweet–salt suppression is the mechanism that does most; the acid handles the frying fat alongside it.
- Treacle tart — Even a medium cider sits well below golden syrup on the sweetness scale; after a mouthful of the tart it reads as sour rather than as balanced.

A faint plastic, candle-wax or celery-like note from sorbic acid used as a preservative, distinct from the geranium taint that bacteria produce from it.
Unwanted refermentation
Fermentation restarting in a sealed container, generating carbon dioxide that was not planned for and pressure that a bottle may not withstand.
Cooked character
A stewed-apple, caramel or jam-like character from heat applied to juice or cider, most often through pasteurisation or hot storage.
Low acidity
A cider without enough acid to give it definition, tasting soft, heavy and dull — and sitting at a pH that leaves it exposed to spoilage organisms.
