French law defines cidre doux numerically, pairing a residual-sugar floor with a low alcohol ceiling; the UK trade code places sweet at the top of a voluntary scale. In North America the phrase sweet cider often means unfermented apple juice, which is a different product entirely.
What makes it this style

- In markets that regulate the word, the residual sugar sits above a stated threshold; in France that threshold is paired with a low alcohol ceiling, so doux implies a weak cider as well as a sweet one.

What varies inside the category
Every style covers a range. This is what legitimately differs between two examples that are both correctly called by this name.
- Whether the sweetness is fruit sugar left behind or sugar returned to a dry cider. Keeved cidre doux and back-sweetened commercial cider reach the same reading by opposite roads.
- Alcohol. A French doux may sit near 2.5% while a British sweet cider sits above 5%.
- The acid balance holding the sugar up. Without acid, sweetness reads as heavy; with it, as fruit.
- Whether the word means fermented cider at all — in much of North America sweet cider is fresh unfermented juice.

About Sweet cider
Sweet cider is the category in which method matters most and is discussed least. Sugar in a finished cider is either sugar the yeast never reached or sugar somebody put back, and those are not the same substance in the glass. Sugar the yeast never reached arrives with the rest of the juice matrix intact — glycerol, unfermented pectin fragments, the fruit’s own balance of glucose, fructose and, in some fruit, sorbitol — and it tends to read as fullness. Sugar returned to a fermented-dry cider arrives on its own, and reads more narrowly as sweetness.
The reason the first route is difficult is nutritional. A yeast population with sugar in front of it stops only when something is missing, and the classic method for making it stop is to remove nitrogen. Keeving does this by clarifying the juice through a pectin gel that carries nutrients out with it; repeated racking does it by leaving the yeast behind in successive vessels. Both leave a ferment that slows, sticks and dies with sugar still in solution. Both take months and neither is reliable, which is why industrial sweetening exists at all.
The French treatment of the word is instructive because it makes the connection explicit. A cidre doux is defined not only by having a great deal of residual sugar but by having very little alcohol, and that pairing encodes a fact of physics rather than a stylistic preference: sugar that has not been fermented cannot also have become ethanol. A sweet cider at 6% is therefore, almost necessarily, a cider that fermented out and was sweetened afterwards. A sweet cider at 2.5% may well be one that stopped on its own.
North American usage adds a genuine ambiguity that no amount of technical care resolves. In much of the United States and Canada, sweet cider means fresh, cloudy, unfermented apple juice sold in autumn, and hard cider means the fermented drink. A British or French reader encountering the phrase in an American source is not reading about a sweetness level at all. The confusion is not anyone’s error; it is two vocabularies that developed separately around the same word.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Where the sweetness came from, which is usually legible. Arrested fermentation leaves lower alcohol; back-sweetening leaves the alcohol of a dry cider with sugar on top; keeving leaves both a low alcohol and a particular rounded texture.
- Whether there is acid underneath. A sweet cider without acid is cloying, and the difference between a good one and a poor one is almost entirely this.
- What the finish does. Sugar shortens a finish; a sweet cider that still finishes long has tannin or acid doing work behind it.
What gets misread
- Assuming sweetness indicates low quality. It indicates a decision, and three of the routes to it are traditional practice rather than a shortcut.
- Assuming a sweet cider is stable. Fermentable sugar and a viable yeast population in a sealed container is the commonest cause of burst bottles, and a sweet cider has the first by definition.
Colder than a dry cider, around 6–8 °C. Perceived sweetness falls with temperature while acidity barely moves, so cold sharpens a sweet cider into balance.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Cidre doux — Alcohol. French doux is capped at a low strength by the decree because the sweetness is meant to come from an unfinished ferment; a back-sweetened British sweet cider can be considerably stronger.
- Keeved cider — How the sugar survived. A keeve starves the ferment of nitrogen so it stops; a sweet cider is more often a dry cider with sugar returned to it.
- Unfermented apple juice sold as cider — In the United States "cider" ordinarily means the unfermented juice. A sweet non-alcoholic apple drink and a sweet cider are two different products with one name between them.

Arrested fermentation
Deliberately halting a ferment while sugar remains, to obtain natural sweetness from the fruit rather than from an addition — and accepting the instability that follows.
Keeving
Forming a floating pectin gel that lifts nutrients and solids out of the juice, so that the ferment starves before it finishes and leaves natural sweetness behind.
Back-sweetening
Adding sugar, juice or concentrate to a cider that has fermented dry — a straightforward adjustment that leaves the drink microbiologically unstable until something is done about it.
Sterile filtration
Membrane filtration at a rating that retains viable yeast and bacteria, which is what allows a sweet cider to be shelf-stable without heat or preservative — provided the filling that follows is aseptic.
Pasteurisation
Heating cider enough to inactivate the organisms that would spoil it, either in the sealed package or in-line before filling, at a measurable cost in fresh aroma.
Food
Interactions rather than suggestions. Each explains the mechanism, so you can extend it to a dish that is not listed.
- Hot Indian curry — At this heat level, sugar is the only lever with measurable effect: sucrose reduces reported capsaicin burn in a dose-dependent way, and the more of it the drink carries the more it does.
- Apple pie — The same mechanism at a lower concentration; it holds where the pie is restrained in sugar and fails against a heavily sweetened one.
- Stilton — The mechanism works at lower concentration too, though a light sweet cider is closer to being overwhelmed and does less about the length of the cheese’s finish.
- Thai green curry — Where the chilli is heavy, more sugar does more; Thai cooking also carries its own palm sugar, which raises the floor.
- Apple crumble — Adequate where the crumble is modestly sweetened; the custard or cream raises the fat load and gives the cider’s acid something to do.
- Cheesecake — Adequate for a lighter, less sweet cheesecake, particularly a baked one; a heavily sweetened set version outruns it.
- Gammon — Where a sweet accompaniment is on the plate — pineapple, apple sauce, a honey glaze — the sweetness floor rises and a fully sweet style stops reading as sweet.
- Jerk chicken — More sugar does more against this level of capsaicin, and the marinade’s own sweetness raises the floor anyway.
- Sichuan food — Where the *málà* is at full strength, more sugar does more, and the fermented bean pastes push the salt very high.
- Bakewell tart — Adequate against a modestly sweetened tart, and its acidity meets the fruit layer.
- Custard tart — Enough sugar to stay in balance and enough acid to clear the egg and cream fat, which is the tart’s main structural feature.
- Doughnuts — Adequate for a sugared rather than glazed doughnut, where the sweetness floor is lower.
- Lancashire — The cheese has a pronounced lactic tang and little salt to be balanced. Sugar here has nothing to suppress and simply collides with the acidity, leaving both sides tasting confected.
- Gruyère — Gruyère is savoury and salty rather than pungent, and there is no bitterness or extreme salinity for sugar to suppress; residual sweetness simply sits apart from the cheese.
- Manchego — The cheese has salt but not the pungency that makes sugar useful; sweetness here leaves the fat uncleared and adds a confected note to a subject whose interest is savoury.
- Goat’s cheese — The cheese’s acidity makes a sweet cider taste cloying and simultaneously exposes its own sourness; nothing on the plate needs sugar, since salt is moderate and there is no bitterness to suppress.
- Handkäse mit Musik — The dish is vinegar-dressed and almost fat-free. Sugar has nothing to suppress and is exposed by the acidity as sharply as it is possible to be — the pairing fails on the first mouthful.

Unwanted refermentation
Fermentation restarting in a sealed container, generating carbon dioxide that was not planned for and pressure that a bottle may not withstand.
Sorbate off-flavour
A faint plastic, candle-wax or celery-like note from sorbic acid used as a preservative, distinct from the geranium taint that bacteria produce from it.
Low acidity
A cider without enough acid to give it definition, tasting soft, heavy and dull — and sitting at a pH that leaves it exposed to spoilage organisms.
Geranium taint
A sharp, unmistakable crushed-geranium-leaf smell produced when lactic acid bacteria metabolise sorbic acid added as a preservative.

Cider carrying enough residual or added sugar to be perceptible without dominating, the commonest sweetness level in British retail.
Cidre doux
The sweet tier of the French cider scale, defined since 2025 by a density at or above 1.024 together with an acquired strength no greater than 3% vol, so that the sweetness is demonstrably unfermented juice sugar.
Keeved cider
Cider clarified before fermentation by a pectin gel that strips nutrients from the juice, producing a slow ferment that stops naturally with sugar still in solution.
Dry cider
Cider fermented out or finished so that little fermentable sugar remains, leaving acid, tannin and alcohol to carry the palate.
