What causes it
Apple blossom aroma in the orchard is built from linalool, benzaldehyde and phenylacetaldehyde, and none of that reaches the vat: the flowers are gone months before harvest. The cider perception is reconstructed from compounds with overlapping character — 2-phenylethanol, made by yeast from phenylalanine through the Ehrlich pathway, supplying the sweet rose-floral core, and low levels of fruit-derived terpene alcohols supplying the lift. The note is favoured by cool fermentation and by nitrogen conditions that push phenylalanine catabolism, and it is a common signature of ciders fermented slowly at low temperature.

2-Phenylethanol
The yeast-made alcohol responsible for the rose and honey note in cider, produced from phenylalanine and one of the few floral aromas that is not carried in from the fruit.

About Apple blossom
Apple blossom is one of the descriptors most likely to be used decoratively, and it is worth insisting on the mechanism: what a taster perceives is a yeast-derived higher alcohol and a small terpene fraction, not anything transferred from the flower.
It is a good marker of cool, unhurried fermentation, and it is systematically stripped by warm ferments, where the same phenylalanine is diverted towards other products and where CO2 evolution carries volatiles out of the vessel.

The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones.
