β-Damascenone is a C13-norisoprenoid rather than a terpene proper — it forms from carotenoid breakdown, not from the isoprenoid pathway that gives linalool — and it is recorded here because this is where CiderHQ discusses that family. Fifty nanograms in a litre is roughly a tenth of the hydrogen sulphide threshold and about a millionth of the ethyl lactate one, which is why baked-apple and honey notes can dominate a cider whose analysis shows nothing unusual.

About Terpenes

Terpenes are the aroma chemistry of aromatic plants: linalool and geraniol in flowers and citrus peel, myrcene and humulene in hops, a large family in every culinary spice. Apples and pears carry them only in traces, which is a large part of why cider is a less overtly aromatic drink than aromatic-grape wine, and why the aroma of a cider is dominated by fermentation products rather than by fruit volatiles.

That makes them the obvious route to a different kind of cider. Hopping a cider, infusing it with botanicals, or adding spice introduces terpenes at concentrations the fruit could never supply, and because their thresholds are so low the effect is immediate and unmistakable. A dry-hopped cider does not taste of beer; it smells of hop terpenes over an apple base, which is a genuinely distinct proposition.

A portion of terpene aroma in fruit is bound as glycosides — sugar-linked, non-volatile and odourless — and released slowly by acid hydrolysis or by yeast and bacterial glycosidases. This is why aroma can appear during maturation that was not present at the end of fermentation, and why enzyme preparations with glycosidase activity are sometimes used to bring it out deliberately.
