What causes it
Lime differs from lemon in a cider context by carrying a green, leafy component alongside the acid, and that component is the same (E)-2-hexenal fraction that drives green apple. The perception therefore arises where very high malic acid coincides with early-picked or high-aldehyde fruit, and it is common in ciders from sharp culinary cultivars pressed at the start of the season. Small terpene contributions, particularly from cultivars with a measurable linalool content, sharpen it further.

About Lime

It disappears entirely after malolactic fermentation, along with the rest of the sharp citrus family, since the acid that carries it has been converted.

The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones.
