Citrus pith
A dry, bitter citrus note where phenolic bitterness sits alongside sharp acidity rather than behind fruit.

What causes it
This is a joint perception of two independent components: procyanidin bitterness on the back palate and malic acidity at the front, without the ripe-fruit ester layer that would normally separate them. It occurs in bittersharp cultivars — high in both acid and tannin under the Long Ashton classification — and in blends where sharp dessert fruit has been given tannin by addition or by long maceration. Quercetin glycosides and phloridzin from skin and core contribute their own dry bitterness and reinforce it.

Procyanidins
The condensed tannins of cider fruit, whose chain length — not their quantity — decides whether the mouth registers bitterness or astringency.
Malic acid
The acid of apples, which supplies almost all the sharpness a cider has and, through pH, decides how vulnerable that cider is to everything that could spoil it.
Quercetin glycosides
The yellow flavonols of apple skin, made in response to sunlight, which contribute a fine astringency and reach the juice only in proportion to how much skin was pressed.
Phloridzin
A dihydrochalcone found in apple and essentially nowhere else, which makes it both a contributor to bitterness and the standard chemical proof that a juice is apple juice.

Combining juices from different cultivars before fermentation so that the blend ferments as a single batch, as against fermenting separately and blending later.

Adding a reactive agent that binds a target colloid and carries it to the bottom, chosen according to whether the problem is tannin, protein or a phenolic taste fault.

About Citrus pith
Citrus pith is a useful descriptor for bittersharp-dominated ciders because it captures the fact that their bitterness reads as citrus-adjacent rather than as the soft, earthy bitterness of bittersweet fruit. The same tannin concentration in a low-acid cider produces a completely different impression.
It is distinguished from excessive bitterness by proportion: pith is a note within a balanced drink, whereas the fault is a bitterness that occupies the whole finish and builds across sips.
