What causes it

Orange peel carries a warmer aromatic profile than lemon, driven in the fruit by limonene, valencene and linalool. In cider the corresponding perception arises from terpene alcohols present at low levels in some apple cultivars and released slowly during maturation as glycosidically bound precursors hydrolyse under the drink’s own acidity. In a botanical cider it may be added directly as peel or as an infusion, which is a different provenance for the same word. In pommeau and barrel-aged cider it also arises from the interaction of oak-derived compounds with residual sweetness.

This is a maturation descriptor more than a fruit one, and its appearance in an aged still cider reflects slow release of bound terpenes rather than anything present at bottling. It is more common in perry than in cider, since pear juice carries a higher terpene load.

Where a cider is labelled as botanical or spiced, the word carries no mechanistic information at all and the note should be attributed to the addition.
