What causes it
Cider contains no citric-fruit oils, so lemon in a cider is a constructed perception rather than a transferred one. Its principal driver is malic acid at high concentration, which the palate reads as a clean, cutting sourness closer to citrus than to the softer sourness of lactic or tartaric acid. Small quantities of terpene alcohols — chiefly linalool and geraniol, which some apple cultivars and some yeast strains supply — and light ethyl esters give it an aromatic top that completes the impression. It is strongest in sharp cultivars, in early-picked fruit, and in ciders that have not undergone malolactic conversion.

Malic acid
The acid of apples, which supplies almost all the sharpness a cider has and, through pH, decides how vulnerable that cider is to everything that could spoil it.
Terpenes
The floral and citrus aroma compounds that apples carry only in traces and that hops, spices and botanicals bring in quantity, which is why a hopped cider smells so different from an unhopped one.
Ethyl butanoate
A short-chain ethyl ester perceived at very low concentration, giving the sweet pineapple-and-apple lift that reads as ripe fruit in a young cider.

About Lemon
Lemon is the most-used citrus descriptor in cider judging and is very largely a report on titratable acidity and on whether malolactic fermentation has run. A cider that has converted its malic acid to lactic loses this note almost entirely, replacing it with a softer, rounder acidity, and the change is one of the clearest sensory markers of malolactic conversion.
It should be recorded as an aroma-and-taste composite rather than as a pure aroma. A panel scoring lemon on the nose alone in a cider with no terpene load is usually reporting anticipation from the acidity they have already tasted.

Unusual among specialist cider writing in that it is primary-research-adjacent: the author is describing work he did, and cites the literature. This is why it is registered at tier 1 for chemistry while a general cider book is not.

The single most useful open cider dataset CiderHQ has found. The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones.
