About Scottish cider
Scotland sits at the edge of where apples ripen reliably, and that single fact governs its cider. The growing season is short, summer heat accumulation is low, and fruit that would reach full sugar in Somerset by early October may not do so at all in Perthshire. Cultivars grown here are chosen for hardiness, disease resistance in a wet climate and early ripening; the tannic bittersweets of the West Country are largely unsuitable, since they ripen late and need warmth to develop their sugar.
The consequence in the glass is a cider built on acid. High malic acid, low sugar and negligible tannin give a lean, sharp, light-bodied drink with pronounced fresh fruit aroma. Producers respond in the usual ways: fermenting cool to preserve aromatics, sweetening back to balance the acid, carbonating to give the palate something to hold, or blending in juice from warmer regions.
Historically Scotland has no continuous cider culture comparable to the English cider counties. There were orchards — the Carse of Gowrie and the Clyde valley among them — grown mainly for fruit rather than for cider, and the drink was never a staple of agricultural life the way it was in Somerset or Herefordshire. What exists now is largely a modern sector, founded in the last few decades by producers who chose cider deliberately rather than inheriting it.
That newness is worth stating rather than glossing, because it changes what the category means. Scottish cider is not a surviving tradition being described; it is a developing one, and its conventions are still being set. The most distinctive work coming out of it makes a virtue of the climate — treating high acid and low tannin as the material to work with rather than as a shortfall against a West Country standard.

What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- What a cool, short season does to the fruit. Scottish orchards ripen later and less completely, and the cider tends to higher acid and lower sugar.
- Whether the fruit is Scottish-grown or brought in, which many producers are open about.
- A young, fresh register rather than a long-matured one. With little tannin there is not much to soften with time, so most of these ciders are at their most interesting within a year and gain nothing from being kept.
What gets misread
- Reading the lightness as a deficiency. It is what the latitude supplies.
- Expecting bittersweet tannin, which very little Scottish fruit carries. What structure there is comes from acid, and a palate reading for grip will find none and conclude the cider is thin when it is simply built the other way.
Cold, around 8 °C. Cool-climate fruit gives high acid and modest tannin, and the aromatic freshness that results is best held at a temperature that keeps it tight.

- Eastern counties cider — A closer relative than the West Country: both are sharp ciders from non-bittersweet fruit.
- Irish cider — Scale and history. Ireland’s category is dominated by a large industry in a way Scotland’s is not.
