Recorded interactions
Written records, each citing the mechanisms it rests on.
Interaction holds
Dry cider
For fresh haddock the requirement is the same as for cod: acidity to meet the lemon, and restraint so the fish is still perceptible.
Mechanisms: Matching intensity · Acid matches acid
Interaction holds
Medium cider
Smoked haddock is a different subject entirely — heavily salted and phenolic — and a little residual sugar suppresses the salt while the smoke sits comfortably alongside light phenolic character in the drink.
Mechanisms: Sweetness balances salt · Bitterness meets char
Holds only under stated conditions
Scottish cider
Smoked haddock is strongly associated with Scotland, and Scottish ciders are generally sharp and low in tannin, which suits both the salt and the delicacy of the flesh.
Mechanisms: Regional tradition · Acid matches acid
Strength is reliability, not rating. What each mechanism claims, and how far.
Combinations that work badly
Published as prominently as the cases that work.
- Barrel-aged cider — Even against smoked haddock, oak tannin adds a metallic edge to the fish and its weight erases the flesh beneath the smoke.
More on Haddock
Haddock deserves separating from cod chiefly because of what is done to it. Fresh, it behaves as a slightly more flavourful lean white fish. Smoked — as finnan haddie, or in a kedgeree or Cullen skink — it becomes salty, phenolic and considerably more intense, and the pairing changes accordingly.
The smoked form is one of the few seafood subjects where salt suppression matters, and where a drink carrying its own phenolic character reads as continuous with the food rather than as competing with it.
Derived by CiderHQ from the documented mechanisms
Produced by rule from the properties above, not written by anyone, and shown with the mechanisms that fired.
Structured inference, not a written judgement — nobody has assessed these combinations. How authored records and derived matches differ.

Haddock is also a subject of FoodHQ, a sister HEKNO product: Cold and hot smoking of haddock, and the dishes built on it.
The styles involved
What each of these is, defined independently of anything it is served with.
Dry cider
Cider fermented out or finished so that little fermentable sugar remains, leaving acid, tannin and alcohol to carry the palate.
Medium cider
Cider carrying enough residual or added sugar to be perceptible without dominating, the commonest sweetness level in British retail.
Scottish cider
Cider from Scotland, made in a cool maritime climate from dessert, culinary and cold-tolerant fruit, in a small sector built largely within recent decades.
What people ask next
Questions readers ask about the things this page mentions. Each one goes to the section that answers it rather than to a page written to receive the question.
- What is a medium dry cider
- Why does my dry cider still taste sweet — Alcohol, glycerol and ripe fruit aroma all read as sweetness even when no sugar remains. High alcohol in particular is perceived as sweet before it is perceived as strong.
- What is barrel aged cider
- Is cider made in scotland

- Every pairing subject — The other foods these same mechanisms have been applied to.
- Cider and perry styles — The acidity, tannin and sweetness the mechanisms operate on.

Peer-reviewed literature on apple phenolics and cider sensory perception
Various journals · peer-reviewed literature · registered as competent for this subject
Registered as a class rather than as one paper, because the mechanisms CiderHQ describes — tannin chain length driving the split between bitterness and astringency, salivary protein precipitation, enzymatic browning — are established across many studies rather than resting on any single one. Individual papers are cited where a specific number is quoted.
BJCP Beer Style Guidelines — cider and perry categories
Beer Judge Certification Program · classification framework · retrieved 2026-08-24
Opened on 2026-08-24, and the edition matters. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.
Denominación de Origen Protegida Sidra de Asturias
Consejo Regulador de la DOP Sidra de Asturias · designation authority · passage verified 2026-08-24
The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
