CAMRA is a consumer campaigning organisation, not a regulator; its definition of real cider carries weight with drinkers and none in law. The phrase méthode traditionnelle is borrowed from sparkling wine and has no cider-specific legal force outside particular appellations.

About Bottle-conditioned cider
Bottle conditioning is the point at which a cider stops being a finished product and becomes something still in progress. Sealing live yeast and available sugar into glass is a decision to let biology continue where the maker can no longer intervene, and everything characteristic of the category follows from that: the carbonation, the sediment, the savoury development over time, and the risk.
Mechanically it is straightforward. Yeast consumes sugar, produces roughly equal molar quantities of ethanol and carbon dioxide, and the gas — with nowhere to go — dissolves into the liquid until the pressure in the headspace and the concentration in solution reach equilibrium. The arithmetic is well established and a maker who knows the residual sugar can predict the finishing pressure with reasonable confidence. What is far harder to predict is a cider bottled with an unknown amount of sugar, which is the situation the méthode ancestrale approach deliberately accepts.
The yeast that generated the gas then dies and slowly breaks down. Autolysis releases mannoproteins and amino acids into the cider, and over months this produces the softened texture and faintly bready, savoury character that distinguishes a long-aged bottle-fermented cider from a force-carbonated one. This is the same mechanism that gives traditional-method sparkling wine its character, and it is the strongest argument for the method beyond authenticity.
Two consequences matter to a drinker. First, sediment is not a fault: an undisgorged bottle-conditioned cider is designed to throw a deposit, and the conventional handling is to stand the bottle, chill it and pour in one movement leaving the last centimetre behind — or, in some traditions, to rouse the sediment deliberately. Second, the cider has a trajectory. It will gain pressure, lose primary fruit and gain lees character, and there is no single correct point on that curve. The record’s honest position is that a bottle-conditioned cider is dated rather than fixed.

What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- The deposit, and how it behaves on pouring. A firm, compact lees pours clean; a loose one clouds the glass and is a sign of a young or disturbed bottle.
- The autolytic character. Cider left on its bottle lees for months acquires a bready, slightly savoury note that a force-carbonated cider does not have, and it is the clearest sensory marker of the method.
- Whether the carbonation is even across the batch. Bottle conditioning is a per-bottle fermentation, so variation between bottles is inherent rather than a failure.
What gets misread
- Reading the deposit as a fault. It is the yeast that produced the carbonation, and a bottle-conditioned cider without one has been disgorged.
- Judging a batch from one bottle. Per-bottle variation is a property of the method.
Stood upright for a day, then poured in one movement, leaving the last centimetre in the bottle. Stopping and restarting the pour lifts the deposit into the glass.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Force-carbonated sparkling cider — A deposit, and the bready note. Forced carbonation produces neither.
- A cider that has refermented by accident — Whether the carbonation was calculated. A deliberate conditioning was primed to a target; an accidental one has whatever sugar was left, and no ceiling.
- Excessive sediment — Whether the cider can be poured clear at all. A conditioning deposit can; a fault-level one cannot.

Carbonating cider by letting a second fermentation finish inside the sealed bottle, so the gas is generated where it is going to stay.
Priming
Adding a measured, calculable quantity of fermentable sugar at bottling so that the fermentation which follows generates a predictable volume of carbon dioxide.
Secondary fermentation
Any fermentative event that follows the primary ferment — residual sugar refermenting, a deliberate second alcoholic fermentation, or the malolactic conversion of the maturation phase.
Lees ageing
Deliberately holding a cider or perry on its fine yeast deposit so that autolysing cells release material that changes texture and foam behaviour.
Bottle pressure management
Matching the pressure a carbonated cider will actually generate to glass that can contain it, taking account of temperature and of any fermentable sugar left in the bottle.
Closure selection
Choosing between cork, crown, screwcap, cage and swing-top, a decision that fixes how much oxygen reaches the cider, whether it can hold pressure, and which faults it is exposed to.
Food
Interactions rather than suggestions. Each explains the mechanism, so you can extend it to a dish that is not listed.
- Cheddar — The fine bead adds a mechanical and carbonic-acid component to the same clearing action, which suits a cheese eaten in quantity rather than in a single slice.
- Camembert — Where no French cider is to hand, the mechanism transfers: a fine, persistent bead does the same clearing and textural work.
- Pork sausages — A dense, uniform-textured food eaten in quantity is exactly where effervescence earns its place.
- Pork pie — Pastry, filling and jelly are all dense and cold; the bead is the only textural relief in the mouthful.
- Sourdough bread — Yeast in the bottle gives a bready, autolytic note that runs alongside the crumb, and the bead relieves a dense chew.

Faults this style is particularly exposed to, given how it is made.
Bottle over-carbonation
More dissolved carbon dioxide in the bottle than intended or than the glass is rated for — a presentation problem at the mild end and a physical hazard at the severe one.
Gushing
Cider that erupts from the bottle on opening, either because it is over-pressurised or because something in it is nucleating the dissolved gas violently.
Excessive sediment
More deposit in the bottle or vessel than the presentation intends, ranging from a normal conditioning yeast layer to a loose sludge that clouds every pour.
Brettanomyces character
Farmyard, horse-blanket, smoky and sticking-plaster aromas from *Brettanomyces* yeast converting hydroxycinnamic acids into volatile phenols.
Unwanted refermentation
Fermentation restarting in a sealed container, generating carbon dioxide that was not planned for and pressure that a bottle may not withstand.

- How is sparkling cider made
- How much pressure builds up in a bottle of cider — Enough to matter. Every gram of sugar fermented in a sealed bottle produces gas, and a bottle not rated for it can fail. The French cider appellations require a minimum of 1.0 to 1.5 bar at 20 °C, and a bottle-conditioned cider can go well beyond that if it was filled with more sugar than intended.
- What is priming sugar — Priming sugar is a measured dose of sugar added at bottling so that the remaining yeast produces carbon dioxide inside the sealed bottle. Too much of it is the usual cause of burst bottles.
