About Bottle-conditioned perry
Sealing perry into glass with live yeast shows the drink at its most complete, and it is also where perry’s peculiarities cause the most trouble. Sealing live yeast into glass with residual sugar produces carbonation, lees character and a drink that develops for years — and in perry it does so against a chemistry that makes the outcome harder to predict than in cider.
The prediction problem is worth spelling out. A maker calculating how much pressure a bottling will generate works from the residual sugar, and in a perry an ordinary density or refractometer reading includes sorbitol, which will never ferment. Take the reading at face value and the estimate of available fermentable sugar is too high; rely instead on a fermentation that appears to have stopped, and the risk is that it has stopped temporarily. Over-pressure and gushing are recurrent problems in bottle-conditioned perry for exactly this reason, and careful producers measure fermentable sugar directly rather than inferring it.
What the method gives in return is texture. Months or years on lees release mannoproteins and amino acids that soften the perry and add a savoury, faintly bready dimension underneath the pear. Combined with the sorbitol’s natural roundness and, where bittersweet pears were used, a firm tannic finish, the result is one of the more complete things this ontology describes — a low-alcohol drink with genuine length.
The traditional home of the practice is the English and Welsh perry counties, where small producers bottle-condition perry from named pear cultivars and often leave it undisgorged. Pouring is the same discipline as with bottle-conditioned cider: stand the bottle, chill it, pour in one movement and leave the last of it behind — or accept the haze, which in a perry is more often pectin than yeast in any case.

What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- The deposit, and how firmly it has settled. Perry lees are often looser than cider lees and lift at the least disturbance, so a bottle that has travelled needs standing upright for longer than a cider would — a day rather than an hour — before there is any point opening it.
- Whether the conditioning was primed or natural. In perry a natural condition on residual sugar is common and is a pressure question.
- Autolytic character over the pear fruit. Months on the lees give a bready, faintly savoury note that in a cider reads as depth and in a perry competes with the thing the drink is for: pear aroma is the most delicate in the category, and a long conditioning can bury it entirely. Whether it has is the question this style turns on.
What gets misread
- Reading the deposit as spoilage. A firm, pale, evenly settled deposit is yeast doing what it was asked to do. What would indicate a problem is a deposit that will not settle at all, a ropy or viscous pour, or a smell of vinegar or crushed geranium above the glass.
- Assuming the carbonation is stable. A perry holding sorbitol, residual fermentable sugar and a live yeast population has not necessarily finished, and a warm month can restart it in the bottle. This is the one style where the pressure in the glass may be higher than the pressure the maker intended, which is a storage question rather than a tasting one.
Stood upright, poured in one movement, and treated with the caution any sweet bottle-conditioned drink deserves.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Force-carbonated sparkling perry — A deposit, and the bready autolytic note that comes with months on the bottle lees. Forced carbonation produces neither.
- Unwanted refermentation — Whether the pressure was calculated. This style is the one where the distinction matters most.

Carbonating cider by letting a second fermentation finish inside the sealed bottle, so the gas is generated where it is going to stay.
Priming
Adding a measured, calculable quantity of fermentable sugar at bottling so that the fermentation which follows generates a predictable volume of carbon dioxide.
Secondary fermentation
Any fermentative event that follows the primary ferment — residual sugar refermenting, a deliberate second alcoholic fermentation, or the malolactic conversion of the maturation phase.
Lees ageing
Deliberately holding a cider or perry on its fine yeast deposit so that autolysing cells release material that changes texture and foam behaviour.
Bottle pressure management
Matching the pressure a carbonated cider will actually generate to glass that can contain it, taking account of temperature and of any fermentable sugar left in the bottle.
Pectinase treatment

More dissolved carbon dioxide in the bottle than intended or than the glass is rated for — a presentation problem at the mild end and a physical hazard at the severe one.
Pectin haze
A persistent, slightly viscous haze that will not settle, caused by pectin from the fruit remaining in solution as a colloid.
Excessive sediment
More deposit in the bottle or vessel than the presentation intends, ranging from a normal conditioning yeast layer to a loose sludge that clouds every pour.
