Making perry
How do I make perry, and what is different about it?
In short
Perry is fermented pear juice, and the process has the same shape as cider — mill, press, ferment, mature, package. Four things differ enough to change what you do: the ripeness window, the acid, the sorbitol, and the pectin.
The ripeness window is the hardest of them. A perry pear passes from unready to over-ripe in a few days, and it does so from the core outwards, so a pear that looks and feels right can already be brown inside. The traditional instruction is to pick when the fruit begins to drop and press within a day or two.
The sorbitol is the one that surprises people. Perry pears carry sorbitol, a sugar alcohol that yeast cannot ferment, in quantities large enough to leave a finished dry perry tasting sweet. That is a property of the fruit, not a decision by the maker, and it is why a perry finishing at a gravity a cider-maker would call stuck is often simply finished.

Perry is unusually punishing at small scale for one reason: the ripeness window is short and perry pear trees are large and crop heavily and unevenly, so a domestic maker is often choosing between pressing under-ripe fruit and pressing fruit that has gone. A large standard tree can carry more fruit than a household can process in the days available.

Potential alcohol calculated from the starting gravity overstates the result.
- Divergence four: citric acid
- Through fermentation and maturation. Apple juice is dominated by malic acid; pear juice carries meaningful citric acid, which lactic acid bacteria metabolise to diacetyl and, in the wrong conditions, to acetic acid. A lactic fermentation in a perry is therefore not the same decision as one in a cider.
- The consequence for the reader
- Three of the four produce a reading or an observation that a cider-maker interprets as a fault when it is not: a pear that looks unready, a perry that finishes sweet, a perry that hazes. Acting on those misreadings creates problems that were not there.
The path
Each step says what happens, why it matters downstream, and what you are actually deciding. The links under a step are where the depth is.
1. Perry pears are not eating pears, and the difference is larger than with apples
A perry pear is high in tannin, often high in acid, and frequently inedible raw in a way that even a bittersweet apple is not. Many of the traditional varieties are astringent enough to be genuinely unpleasant. The fruit is small, hard, and — in the old orchards — carried on trees that can stand for two or three centuries and reach a size no apple orchard sees.
Naming is worse than with apples. Perry pear synonymy is notoriously unreliable: the same variety carries different names a few miles apart, and the same name attaches to different varieties in different counties. Where a variety matters to what you are doing, the identification is worth checking against a collection rather than against a label.
Why it matters: Substituting eating pears produces a drink, and it is not perry in any sense a perry-maker would recognise: it has no tannin, little acid structure and a different sugar profile.
What you are deciding
- Whether the fruit you have is actually a perry pear. Astringency raw is the crude test; a named variety from a known tree is the reliable one.
- Whether to blend varieties. Perry pears divide into acidic, astringent and mild groups much as apples do, and single-variety perries are the exception rather than the rule.

Read on 2026-08-24 — and the address CiderHQ had registered, perrypears.co.uk, is no longer the Centre at all. It fails the TLS handshake over https, and over plain http it resolves to a Sedo domain-parking page: an earlier pass in this sprint recorded it as retrieved on the strength of an HTTP 200, which was wrong, and the correction is the point. The Centre publishes at nationalperrypearcentre.org.uk. It is the closest thing British perry has to an identity authority: it holds at least two examples of most known varieties, states that the DNA of most of them has been determined and is used as an aid to identification, and publishes a variety register with synonym lists. Its 121-variety register is transcribed into the perry pear records, including the nineteen names it shows being claimed by more than one variety.

A four-page compilation, dated March 2010, of the Long Ashton perry pear varieties: for each of twenty pears, its vigour, cropping habit, maturity window, specific gravity, acidity, tannin and an assessment of vintage quality. It rests on Luckwill and Pollard’s Perry Pears (1963), which CiderHQ has verified bibliographically and has not opened, so the figures are held at traditional-record tier rather than at research tier despite originating in institutional analysis. This is the report that ended a two-sprint gap: before it, no perry pear page on the site carried a cultivar-specific number.
2. The window is days, and it closes from the inside
Perry pears ripen from the core outwards. By the time the flesh at the surface has softened, the centre may already have broken down to a brown, mealy state that contributes nothing but off-flavour. Cutting a sample fruit in half is the only reliable check and it is not optional.
The traditional rule is to gather when the fruit starts to fall and to press within a day or two. Where the fruit is a little hard, a short sweat of a few days is normal practice; where it is already soft, waiting is not an option. This is the opposite of the apple practice of holding fruit in a heap for a fortnight.
Why it matters: A perry pressed a week late tastes of the breakdown rather than of the fruit, and no subsequent step recovers it.
Take care hereFruit that has broken down internally is also fruit that rot organisms have had access to. The patulin question applies to pears as it does to apples: discard visibly rotten fruit rather than pressing it, because fermentation does not remove the toxin.
What you are deciding
- Whether to sweat at all, which depends entirely on where the fruit already is.
- Whether to press a partly-gone crop or lose it. There is no good answer; the honest one is that some seasons the fruit is not usable.
What to measure
- Cut a fruit and look at the core — Whether the ripeness has passed. Brown, dry or mealy tissue at the centre means the window has closed regardless of how the outside feels.

Registered because it answers, in law and in a number, the question of what rotten fruit actually costs. Patulin is a mycotoxin produced by moulds — principally *Penicillium expansum* — growing on bruised and damaged apples, and it survives pressing and fermentation. Cider is not lumped in with fruit juice here: it has its own line in the table, at the same limit. That is the sharpest available answer to "does it matter if some of the fruit is rotten", and it is why windfall selection is a food-safety control rather than only a quality preference.

3. Milling and pressing: pears fight back differently
Pear pomace is wetter and more slippery than apple pomace and it does not build into a stable stack as willingly. A pear cheese will squirt out from between the cloths under pressure in a way apple pomace rarely does, so pressure is applied more gradually and the stack is built with more care.
There is also a well-attested practice of letting milled pear pomace stand for several hours before pressing. This allows some of the tannin to bind and settle rather than passing into the juice, which moderates the astringency of a very tannic variety. It is a deliberate loss, chosen.
The stand is also where a perry maker meets the fruit’s stone cells. Pear flesh carries gritty lignified clusters that apples do not, and they do not mill away — they pass into the pomace, block the drainage paths a stack relies on and are part of why a pear cheese presses slower than an apple one. Nothing is done about them. They are a reason to expect the operation to take longer rather than a problem to solve.
Why it matters: A perry pressed the way an apple is pressed gives less juice, in a messier operation, and carries more astringency than the maker probably wants.
HazardThe two machines are the same as for cider and so are the injuries. A mill takes fruit by grabbing it and does not distinguish fruit from a hand, so nothing is cleared or fed by hand until it has stopped and been isolated at the source. A loaded press stores energy and releases it sideways when a stack fails — which a pear stack does more readily than an apple one, because the pomace is wetter and slides. Build square, load gradually, and rebuild rather than pressing on through a bulge.

4. Sorbitol: why the arithmetic does not transfer
Pear juice contains sorbitol, a sugar alcohol, at levels far above those found in apples. Yeast does not ferment it. It contributes to the specific gravity of the juice and it stays in the finished perry, where it tastes sweet.
Two consequences follow, and both matter. First, potential alcohol calculated from starting gravity overstates the result, because part of the gravity was never fermentable. Second, a perry that has genuinely finished fermenting sits at a higher final gravity than a dry cider — often well above 1.000 — and reads as sweet. A cider-maker looking at that number concludes the ferment has stuck. It has not.
Why it matters: This single fact explains most of the confusion between cider practice and perry practice, and acting on the wrong reading — feeding, warming or repitching a perry that is simply finished — creates problems that were not there.

- Whether to use the standard potential-alcohol figure at all. The honest approach is to expose the finishing gravity as an input rather than assuming it.
- How to judge completeness: by a stable gravity over days rather than by an absolute number.

- Potential alcohol with the finishing gravity set explicitly, not assumed — A realistic strength for a perry. Assuming a dry finish at 1.000 overstates it. Work it out.
- Apparent attenuation — How far it has gone — but read against perry expectations, not cider ones. A perry reading low has not necessarily stalled. Work it out.

5. Citric acid, and what it invites
Apple juice is dominated by malic acid. Pear juice carries malic too, but also a meaningful quantity of citric acid, and that difference has a microbiological consequence rather than only a sensory one.
Lactic acid bacteria metabolise citric acid, and among the products are diacetyl and — in the wrong conditions with the wrong organisms — acetic acid. Perry is therefore more exposed than cider to a lactic fermentation going somewhere unwanted, and the mechanism is the citric acid rather than any general fragility.
Why it matters: It changes what a lactic fermentation means in a perry. Encouraging malolactic in a perry is not the same decision as encouraging it in a cider, and the risk is not the same risk.

6. Fermenting a perry
Cool and slow applies here as it does to cider, and rather more so: perry aroma is delicate, and a warm ferment strips it. The nitrogen picture differs — perry pear juice is often low in assimilable nitrogen and the resulting sulphide risk is real — but feeding a perry has to be weighed against the fact that some of the residual sweetness comes from the fruit and some from a ferment that ran out of resources.
Perry clears more slowly than cider and holds pectin more stubbornly. A pectin haze in a perry is common, is cosmetic, and is not evidence of anything having gone wrong.
The two things a perry does that alarm a cider-maker are therefore both normal, and they arrive together: it finishes above 1.000 and it stays cloudy. Between them they describe a stuck, hazy ferment in cider terms and a perry behaving exactly as perry behaves. The reading that separates the normal case from the real one is the series — a gravity that has stopped moving over several days has stopped, whatever number it stopped at.
Why it matters: Most of the interventions a cider-maker would reach for on seeing a slow, sweet, hazy ferment are the wrong response to a perry behaving normally.
HazardAn active fermentation replaces the air around it with carbon dioxide, which is heavier than air, invisible and has no smell to warn you. It collects at floor level and in cellars, pits and outbuildings, and the first effect of a dangerous concentration is confusion rather than breathlessness — so the person affected is the least able to recognise it. Ferment where there is ventilation, ventilate a closed cellar before working in it rather than after, and never enter a vessel that has held a ferment.

- Whether to treat for pectin, or accept the haze as characteristic.

- Gravity, read as a series rather than as a number — Whether it is still moving. In perry the absolute value tells you much less than it does in cider. Work it out.

7. Bottling a perry that is sweet and has yeast in it
A finished perry frequently contains fermentable sugar as well as unfermentable sorbitol, and it contains a yeast population that stopped because conditions ran out rather than because the sugar did. That combination in a sealed bottle is a refermentation waiting for a warm week.
The traditional resolutions are to bottle deliberately for a light natural sparkle in bottles that can take it, or to stabilise before bottling and accept a still perry. What does not work is bottling a sweet perry into ordinary glass and hoping.
Why it matters: Perry is more exposed to this than cider is, precisely because its natural finishing point leaves sugar behind.
HazardA sweet perry with live yeast in a bottle not rated for pressure is the highest-risk combination described anywhere on this site. Either stabilise it or use champagne bottles with a proper closure. Store conditioning bottles cool and crated, and treat any bulging or leaking bottle as described in the over-carbonation note rather than opening it in the hand.

8. Judging a perry on perry’s terms
A good perry is lighter than a good cider, lower in tannin than its fruit suggests, and carries a sweetness that has nothing to do with residual fermentable sugar. Judged against cider it reads as slight; judged against itself it is a distinct drink with its own balance.
The vocabulary differs too. Pear-drop, quince, elderflower and a particular fine astringency are perry terms. So is the honest observation that a great deal of perry is fragile, does not keep as long as cider, and rewards being drunk in its first year.
Why it matters: Applying cider expectations to a perry produces a judgement about the wrong drink, and the commonest version of that judgement is that the perry is thin.
