About Perry
Perry is not cider made from pears. It is a parallel tradition with its own fruit, its own chemistry and its own problems, and the habit of treating it as a subcategory of cider has done it a good deal of damage. The fruit alone justifies the separation: perry pears are a distinct group of Pyrus communis cultivars, hard, tannic, sharply astringent and generally unpleasant to eat, grown on trees that reach great size and great age and that may take decades to come into bearing.
The chemistry that most distinguishes perry is sorbitol. Pears transport and store carbohydrate partly as this six-carbon sugar alcohol, and wine and cider yeasts cannot ferment it under ordinary conditions. Whatever the fermentation does, the sorbitol remains. That single fact explains a great deal: why a perry fermented to apparent dryness still tastes softly sweet, why residual sweetness in perry is a property of the fruit rather than a decision by the maker, and why gravity-based alcohol calculations systematically overestimate a perry’s strength — part of the measured solids were never going to ferment.
Two further differences matter in the cellar. Pear juice contains citric acid alongside malic, which gives its acidity a rounder quality than an apple’s and behaves differently under malolactic conversion, since citric metabolism by lactic bacteria can produce diacetyl and, in the wrong circumstances, less welcome compounds. And pear juice carries much more pectin, so it presses poorly, clarifies slowly and hazes persistently — the reason traditional perry was often cloudy and modern perry usually meets a pectic enzyme. The fruit is also unforgiving about timing. Perry pears ripen from the inside and can pass from unready to breaking down within days, and the old rule was to gather them and wait until they had begun to soften at the core. Milling too early gives a hard, astringent juice with poor yield; too late gives one already going. Cider apples allow weeks of latitude; perry pears allow very little.
On the phrase pear cider: it is used commercially, and the argument about it is real and unresolved. Those who object hold that perry is the historical English word for the fermented drink of pears, that pear cider was introduced to sell products made from dessert pears or from concentrate to drinkers who did not know the older word, and that allowing the two terms to merge conceals the difference between a traditional perry-pear drink and an industrial one. Those who defend it hold that perry is unfamiliar to most consumers, that pear cider is transparent to anyone who reads it, and that the older word had itself become commercially dead. Both positions contain something true. This site uses perry because it is the precise term, records pear cider as a commercial phrase in current use, and declines to treat either as a mark of quality — a perry made from dessert pear concentrate is not improved by the older name, and a well-made perry-pear drink is not diminished by the newer one. What matters to a drinker is the fruit, and neither phrase reliably discloses it.
What a drinker meets ranges very widely. A perry from soft, low-tannin pears is light, floral, faintly honeyed and short. One from bittersweet or bittersharp fruit has grip, a firm astringent finish and can age for years. The common thread is a smooth, slightly viscous texture and a sweetness that sits behind the fruit rather than on top of it — the sorbitol, doing what nothing in a cider does.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Sweetness with no residual fermentable sugar behind it. Sorbitol does not ferment and is the single most important fact about the drink.
- A lighter body and lower tannin than the fruit would suggest, because much of the tannin is left behind in the pomace or bound during pressing.
- The specific aromatic register — pear-drop, quince, elderflower — which is not a lighter version of cider’s but a different set of terms.
What gets misread
- Judging it against cider and reporting thinness. Perry is lighter, and the report is about the wrong drink.
- Reading a high finishing gravity as a stuck fermentation. A dry perry commonly finishes well above 1.000.
- Reading the haze as a fault. Pear juice holds pectin more stubbornly than apple juice and a hazy perry is ordinary.
Cool, and soon. Perry is more fragile than cider and a good deal of it is at its best within a year.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Pear cider — A contested commercial term. Some producers use it for perry; others use it for a cider-based drink flavoured with pear, and the two are not the same product. The word is not defined in law in most markets.
- Poiré — The French term, and specifically the Domfront practice, which has its own appellation and its own required proportion of one cultivar.
- A stuck fermentation — Whether the gravity is stable. A perry that has finished is stable at a gravity a cider-maker would call stuck.
- Cider — Acid profile as well as fruit. Pear juice carries citric acid, which apples largely lack, and that changes what a lactic fermentation does.

Pomace conditioning
Letting milled pomace stand before it goes to the press so that it drains better, presses faster and gives more juice.
Rack-and-cloth pressing
Building pomace into thin cloth-wrapped layers separated by racks, so that juice has a short path out and the stack can carry the pressure needed to force it.
Pectinase treatment
Adding pectin-degrading enzyme preparations to juice so that haze-forming and viscosity-forming pectin is broken down before fermentation.
Wild fermentation
Letting the microflora already present on the fruit and in the press house carry the ferment, in a succession rather than as a single organism.
Racking
Moving cider off the sediment it has thrown, which both cleans the liquid and — by taking yeast and nitrogen away with the deposit — slows what is left of the ferment.

- Stinking Bishop — The rind is literally washed in perry, so the aromatic connection is physical rather than analogical, and the cheese takes its name from the pear variety used. Perry’s soft sorbitol sweetness also answers the rind’s bacterial pungency where acid alone would not.

- Harissa dishes — Sorbitol sweetness with almost no tannin is structurally close to ideal against chilli heat: sugar lowers the burn, and the absence of astringency means nothing is adding to it.
- Quince — Quince is a pome fruit closely related to pear and apple, and its floral, honeyed aromatics overlap with the perfumed register of a good perry; the sweetness of a cooked quince paste needs some sugar in the glass.

Volatile acidity
The measurable fraction of acidity that can be steam-distilled off, dominated by acetic acid and read as vinegar sharpness in the nose and a hard, hot finish.
Mousiness
A retronasal taint of mouse cage, stale popcorn or crackers that appears only after swallowing — and that a substantial fraction of people cannot detect at all.
Excessive astringency
A drying, roughening, mouth-puckering sensation that outstays its welcome, produced by larger phenolic polymers precipitating salivary proteins.
Stuck fermentation
A fermentation that has stopped before the sugar is gone and will not restart, leaving a sweet, low-alcohol cider that is vulnerable to everything.

- How are apples pressed for cider — The fruit is first milled to a pulp, then that pulp is squeezed — traditionally in cloth-wrapped layers under a screw or hydraulic ram, and industrially in a belt or bladder press. Whole apples cannot be pressed usefully; they must be broken first.
- How does cider ferment — Yeast consumes the sugar in apple juice and produces roughly equal masses of ethanol and carbon dioxide, along with the esters and higher alcohols that give cider much of its aroma. In a wild ferment several yeast species take turns before *Saccharomyces* finishes the job.
- Why did my cider stop fermenting — The usual causes are a shortage of yeast-available nitrogen, a temperature that has dropped, too much sulphite at the start, or a yeast that has reached its alcohol limit. Check the gravity before assuming anything is wrong: many ciders simply finish.
