About Sparkling perry
Sparkling perry has a longer documented history than most people expect. Seventeenth-century English writing on cider and perry describes bottling both before fermentation had finished so that they would foam on opening, and perry in particular was singled out at the time as producing a fine, wine-like sparkling drink. The strong English glass that made this possible is the same technology that underlies the whole history of deliberately sparkling drinks.
The format suits the fruit for reasons that go beyond fashion. Pear aromatics are volatile and delicate, and carbonation carries them to the nose efficiently; the sorbitol sweetness that survives any fermentation is balanced by the perception of sharpness that dissolved carbon dioxide creates; and the light body of a perry from low-tannin fruit is filled out by the bubble. Perry that would read as slight when still can be complete when sparkling.
All three carbonation routes are used. Traditional-method perry, fermented in bottle and disgorged, carries lees character and a fine persistent mousse and is the version that most invites comparison with sparkling wine. Tank fermentation gives a cleaner, quicker result. Injection gives complete control and no yeast contribution. Producers making a serious bottle-fermented perry generally say so on the label, because nothing else discloses it.
Two technical cautions belong to the format. Pear juice’s pectin makes riddling and disgorgement harder than with cider, since a deposit that will not compact is difficult to remove cleanly. And a perry with residual fermentable sugar and live yeast is a genuine over-pressure risk, more so than cider because the sorbitol present in the analysis can mask how much fermentable sugar actually remains.

What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- What the gas does to the sorbitol sweetness. Carbonation sharpens the palate and makes a naturally sweet perry read considerably drier.
- Whether the carbonation is natural or added, which the bead and the deposit usually indicate. A bottle-conditioned perry leaves a sediment and generally shows a finer, more persistent bead; a force-carbonated one is clear and its bubble is coarser and dies faster in the glass.
- Acid, which the gas also sharpens. Carbon dioxide forms carbonic acid in the mouth and stimulates the trigeminal nerve, so a sparkling perry reads sharper as well as drier than the same liquid still — which is why perry with modest acid can carry carbonation that would make a sharp cider aggressive.
What gets misread
- Reading a light natural sparkle as a refermentation. In perry it is often the intended state, and the distinction is whether the maker chose it — a deposit and a stated bottle conditioning say chosen, while a straining seal and a gushing pour say otherwise.
- Expecting a cider’s body under the bubbles. Perry is the lighter drink before any gas goes into it, and carbonation makes a light body read lighter still. That is the style rather than a thinness in the fruit.
Cold but not iced — around 8–10 °C — in a glass with enough bowl to hold the mousse. Colder than that and the pear aroma the gas exists to carry will not be there to be carried.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Bottle-conditioned perry — A deposit. Bottle conditioning leaves one.
- Poiré — The French tradition, which is generally sparkling by default.
- An unintended refermentation — Whether the pressure is stable and was calculated. A sweet perry with live yeast is the highest-risk bottling on this site.

Traditional method
A second fermentation in the bottle the cider will be sold in, followed by riddling the deposit into the neck and expelling it, so the drink is both bottle-fermented and clear.
Secondary fermentation
Any fermentative event that follows the primary ferment — residual sugar refermenting, a deliberate second alcoholic fermentation, or the malolactic conversion of the maturation phase.
Tank conditioning
Running a second fermentation in a sealed pressure tank so the gas is generated by yeast but the sediment never reaches the bottle.
Forced carbonation
Dissolving carbon dioxide into cider under pressure to a chosen level, giving complete control of the sparkle and none of the flavour a second fermentation would contribute.
Transfer method
Fermenting in bottle for the character, then emptying the bottles under counter-pressure into a tank, filtering and refilling to remove the deposit without riddling.
Bottle pressure management
Matching the pressure a carbonated cider will actually generate to glass that can contain it, taking account of temperature and of any fermentable sugar left in the bottle.

The catalogue entry names Luckwill alone where the standard citation names Luckwill and Pollard as joint editors; CiderHQ keeps both names and records the discrepancy rather than silently following one catalogue. Identified on 2026-08-24 from the 1678 edition held by the Internet Archive. John Worlidge, active 1669–1698; the work ran to further editions including 1691, so a citation to it should say which. The full title is broader than the short one CiderHQ uses and matters for what the book can be cited for: it covers other fruit wines and drinks alongside cider, so it is evidence about seventeenth-century English fruit fermentation generally rather than about cider alone.

It fails the TLS handshake over https, and over plain http it resolves to a Sedo domain-parking page: an earlier pass in this sprint recorded it as retrieved on the strength of an HTTP 200, which was wrong, and the correction is the point. The Centre publishes at nationalperrypearcentre.org.uk. It is the closest thing British perry has to an identity authority: it holds at least two examples of most known varieties, states that the DNA of most of them has been determined and is used as an aid to identification, and publishes a variety register with synonym lists. Its 121-variety register is transcribed into the perry pear records, including the nineteen names it shows being claimed by more than one variety.
