Soft red-flushed fruit giving a juice of moderate acidity and light grip, with a fresh pear character that fades quickly if the fruit is milled late.

Aroma

No aroma descriptors are recorded for Blakeney Red, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

It is recorded here because the unfermentable fraction is what makes a fully fermented Blakeney Red perry taste sweeter than a fully fermented cider, and no per-cultivar sorbitol analysis for this pear has been verified. The range is not tied to a single study or season.
  • Long Ashton perry pear analyses, reaching CiderHQ through a National Association of Cider Makers report compiled in 2010 from the station’s material. The underlying volume is Luckwill and Pollard, Perry Pears (University of Bristol, 1963), which CiderHQ has verified bibliographically and not opened. The compiler warns that juice quality in perry pears improves markedly with tree age, and that young trees give weaker acid and tannin and a lower gravity. A single figure for a perry pear is therefore a figure for a tree of some unstated age.
  • Long Ashton perry pear analyses, reaching CiderHQ through a National Association of Cider Makers report compiled in 2010 from the station’s material. The underlying volume is Luckwill and Pollard, Perry Pears (University of Bristol, 1963), which CiderHQ has verified bibliographically and not opened. A permanganate figure, not comparable with a Folin–Ciocalteu total-phenolics figure.
  • One sample from one source in one season. The surveyor reports the same variety differing markedly between years, sites and tree types, and publishes the samples separately rather than pooling them.
  • Measured as “true tannin” — the polymerised phenolic fraction — separately from the phenolic acids. It is not a Folin–Ciocalteu total and not a permanganate total, and should be compared only with figures produced the same way.
  • Perry pear juice runs far lower in assimilable nitrogen than cider apple juice, a difference the Long Ashton workers reported and this survey confirms across most of the varieties sampled. Several readings here sit below the level at which a ferment is generally expected to need feeding.
  • Proline is an amino acid a wine or cider yeast cannot assimilate without oxygen, so it does not count towards usable nitrogen. In these pear juices it routinely exceeds the whole assimilable amino pool, which is why a perry must can be rich in amino acids and starved of nitrogen at the same time.
  • The four fermentation trials were chaptalised by differing amounts to hit a common alcohol target, so the finished strengths are not a property of the fruit and CiderHQ does not record them as measurements. The juice gravity and juice pH below are measurements of the juice as pressed, before any adjustment.

Late September into early October in the Three Counties. The window is short: the fruit is ready when it begins to drop and is past use within about a week of that, a pattern that holds across most perry pears and is sharper here than in later cultivars. The National Perry Pear Collection records it ripening in the first half of October at Hartpury, which agrees with the window recorded here.

Heavy years alternate with light ones on mature standards. The pattern is less pronounced than in Barland or Butt but is enough that a single-orchard perry maker cannot plan on an even supply.

Days rather than weeks. Fruit gathered from the ground must go to the mill more or less at once; held in a heap it browns from the core outwards and the juice loses its freshness before it is pressed.

Flowers in the middle of the pear season. Like most perry pears it sets poorly on its own pollen, so a solitary tree in a garden crops erratically where the same tree in a mixed orchard does not. The National Perry Pear Collection places it in the mid flowering band, from flowering records kept over many seasons.

Pears need a pollinator

Pears are not self-fertile. A variety needs another in blossom at the same time to set fruit, which is why the flowering band matters more in a perry orchard than the harvest window does.

Ripening moves with the site and the season. Where the National Perry Pear Collection’s observation at Hartpury falls in a different band from the window recorded here, both are kept rather than one overwriting the other.

Established as a single-varietal cider

Single-variety Blakeney Red perry is long established and is what many people in the Three Counties mean by perry without qualification. The result is light and fairly quick to mature rather than structured, and it does not reward long keeping.

About Blakeney Red

Blakeney Red is the pear a Three Counties perry orchard is most likely to be built around. It takes its name from Blakeney in the Forest of Dean, where the tradition places its origin, and it spread across Gloucestershire, Herefordshire, Worcestershire and into Monmouthshire in sufficient numbers that it is now the cultivar most often found standing in a neglected orchard. That ubiquity is the reason for its prominence here: it is not the most structured perry pear, nor the most highly regarded by makers who want tannin, but it is the one that survived in quantity.

The juice is moderately acidic with little tannin, which places it as medium sharp under the perry pear scheme. In practice it gives a light, fresh perry that comes together quickly and is drinkable young. What it does not give is grip, and a maker wanting structure blends it with a Butt, a Barland or a Winnal’s Longdon rather than pressing it alone. Its sorbitol, like that of any pear, survives fermentation intact, so a Blakeney Red perry fermented out by the yeast still tastes appreciably sweet — a fact that regularly misleads people into thinking the ferment stopped early.

Its history runs unusually wide for a perry pear. The fruit was canned and bottled commercially, giving it a market outside drink, and during the First World War it was used as a source of dye for khaki cloth. Both uses depended on the same thing: a large, reliable, red-fleshed crop from trees that needed almost no attention. Neither use survives, but they explain why Blakeney Red was planted in numbers that the more interesting perry pears never reached.

The trees are large, long-lived standards, and a mature Blakeney Red is a substantial piece of orchard furniture rather than a fruit bush. Cropping alternates between heavy and light years on older trees. The harvest window is short even by perry pear standards — the fruit is gathered as it falls and is past use within about a week — which is one of the practical reasons perry has never scaled the way cider has.

Names, origin and identity

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

The association with Blakeney is parish tradition rather than a documented raising. No record names a raiser, a date or a parent tree, and the cultivar was already widespread by the time anyone wrote it down.
