Feta combines two properties that pull a pairing in opposite directions. The brine makes it one of the saltiest cheeses in ordinary use, which argues for residual sugar; the lactic acidity of the curd is high enough to flatten a soft drink, which argues for acidity. A style that is both sweet and sharp resolves the conflict; a style that is only one of the two solves half the problem.

Tannin is the property to avoid. A salted, moist, low-casein cheese gives astringency nowhere useful to go, and the salt-driven suppression of bitterness does not extend to the tactile drying that tannin produces.
