No authority defines farmhouse cider. CAMRA’s real cider criteria and the practice recorded by county museums and pomologists describe it, but a producer may depart from any part of the description and still be within the tradition. The word is a description of practice, not a certification.
What makes it this style
- Full-juice cider from cider-specific fruit, dominated by bittersweet cultivars grown for tannin rather than for eating.
- Fermentation is spontaneous, driven by the yeast on the fruit and resident in the press house and vessels.
- Maturation is in wood or in tank without filtration, and the cider is sold still and often cloudy.
- The cider is made where the fruit is grown, on a scale where each vessel is a separate cider rather than a component of a national blend.
What varies inside the category
Every style covers a range. This is what legitimately differs between two examples that are both correctly called by this name.
- Sweetness runs from bone dry to noticeably sweet within the same tradition and often within the same yard, depending on how far each vat fermented.
- Ferment character. Some vessels carry marked Brettanomyces and lactic notes that the tradition accepts and a technical panel would fault.
- Clarity, from bright to opaque, with no relationship to quality.
- Volatile acidity, which is present in almost all of it and is a defining feature at low levels and a fault at high ones — where that line falls is genuinely disputed.
- Whether the cider has been diluted or sweetened before sale, which is widespread and seldom declared.

Scored as bands rather than points, because the category genuinely covers a range and a single figure would claim a precision it does not have.

About West Country farmhouse cider
Farmhouse cider is the West Country’s working drink and the reason the English cider tradition looks the way it does. It grew out of mixed farming: orchards that also supported grazing, fruit gathered from standard trees after it had fallen and sweated, a press used a few weeks a year, and cider made partly for sale and partly as payment in kind to farm labour. The practice survived into living memory in Somerset, Devon and the Marches, and the museums of the region hold the equipment that made it.
The fruit is the first thing that separates it from every other tradition. Bittersweet cider apples — high in tannin, low in acid, inedible raw — have no real counterpart in dessert or culinary fruit, and they exist because generations of West Country growers selected for what made good cider rather than for what ate well. A blend built on Dabinett, Yarlington Mill and Harry Masters Jersey ferments to something with substantial bitterness and astringency, low acid, and a body that comes from phenolic material rather than from sugar.
The second is the fermentation. Nothing is added: no yeast, often no sulphur, and the ferment runs on the population that arrived with the fruit and lives in the building. That produces a long, cool ferment through the winter with a succession of organisms, and it produces house character — the reason two farms three miles apart make recognisably different cider from similar fruit. It also produces the tradition’s characteristic marginality. Volatile acidity, Brettanomyces, lactic activity and a degree of oxidation are ordinary rather than exceptional, and the tradition has long treated moderate levels of all four as part of the flavour.
The third is what happens at the end, which is largely nothing. The cider is racked, left in wood or in tank, and drawn off still, unfiltered and unpasteurised. There is no attempt at consistency between vessels, and none between years. This is why a single number for sweetness would misrepresent the category so badly: a farm selling from three barrels may be selling a dry, a medium and something close to sweet, all made the same way in the same autumn, differing only in how far each stopped.
What a drinker meets is therefore genuinely unpredictable and should be described as such. At one extreme it is a dry, tannic, savoury cider of considerable depth with a long astringent finish and a farmyard edge. At the other it is acetic. The tradition contains both, and any account that presents only the first is describing an ideal rather than a practice.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Tannin doing the structural work that acid does elsewhere. This is the defining property and it is where the whole tradition’s fruit choice points.
- A long, drying finish rather than a sharp one. Astringency builds across sips here, so a single mouthful understates it.
- The oxidative and phenolic background. Farmhouse practice — wood, incomplete filling, wild organisms — produces a set of notes that would be findings in a modern cider.
What gets misread
- Calling the farmyard note a fault. At the intensities normal here it is the signature of the tradition, and the line is intensity rather than presence.
- Excusing genuine spoilage as farmhouse character. Vinegar in front of the fruit, mousiness and ropiness are faults in Somerset as much as anywhere.
- Expecting acid. West Country bittersweets are low in it by design, and a cider that reads soft is behaving correctly.
Cellar temperature rather than fridge temperature. Cold flattens tannin and shuts down exactly the aromatic complexity this style is made for.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Scrumpy — Scrumpy has no fixed definition and is used for anything from a carefully made farmhouse cider to a rough one sold from a barrel. It is a register rather than a category.
- Modern mainstream cider — Tannin. A mainstream cider from dessert fruit has almost none, and no amount of marketing vocabulary supplies it.
- Brett character as a fault — Whether the fruit is still present underneath. Complexity has added something; a fault has taken the apple away.

Sweating the fruit
Deliberately heaping or storing gathered fruit so that it softens, loses water and finishes converting starch before it goes to the mill.
Milling
Reducing whole fruit to a pulp so that the press has cell walls it can drain, rather than intact apples it can only bruise.
Rack-and-cloth pressing
Building pomace into thin cloth-wrapped layers separated by racks, so that juice has a short path out and the stack can carry the pressure needed to force it.
Wild fermentation
Letting the microflora already present on the fruit and in the press house carry the ferment, in a succession rather than as a single organism.
Barrel ageing
Holding cider in wood — which may mean an old neutral vat used simply as a vessel, or fresh or spirit-seasoned oak used as a source of flavour, and the two are not the same operation.
Racking
Moving cider off the sediment it has thrown, which both cleans the liquid and — by taking yeast and nitrogen away with the deposit — slows what is left of the ferment.
Blending
Combining separate lots of cider or perry into one, which in cider is the historically normal way of making the drink rather than a remedy applied when single lots disappoint.

Food
Interactions rather than suggestions. Each explains the mechanism, so you can extend it to a dish that is not listed.
- Cheddar — Casein is unusually good at binding condensed tannin, so the phenolic grip of a bittersweet-based cider is taken up by the cheese instead of by salivary protein; what is left is the fruit and the acid, which shift the butterfat film. The combination is also the West Country’s own, made from the same farms.
- Roast pork — Roast pork presents both of the properties tannin and acid address: a large quantity of muscle protein for the tannin to complex with, and rendered fat for the acid to clear. Cider and pig-keeping also occupied the same farms, since pomace was fed to stock.
- Ploughman’s — The pairing the folklore is actually about, and one that holds up: cheese and cider from the same counties, with the cheese’s protein taking up the tannin that would otherwise be exposed by the pickle.
- Roquefort — A tannic dry cider against a very salty blue is a double failure: no sugar to suppress the salt, and the cheese’s own bitterness compounds the cider’s phenolic bitterness rather than being softened by it.
- Goat’s cheese — Firm tannin against a lean, high-acid cheese has little protein and no fat to be softened by, so the astringency is left fully exposed and reads as harsh.
- Feta — Brine reduces salivary lubrication and firm tannin then arrives at an already dry palate; the cheese also offers little intact casein, so there is nothing for the tannin to bind.
- Handkäse mit Musik — A sour-milk cheese carries very little fat to buffer tannin and its acidity is already stripping; adding astringency produces a harsh, drying combination.
- Black pudding — Tannin and the metallic, iron-driven character of blood reinforce one another into something harsh and drying; this is one of the few savoury subjects where firm tannin actively works against the food.

Faults this style is particularly exposed to, given how it is made.
Volatile acidity
The measurable fraction of acidity that can be steam-distilled off, dominated by acetic acid and read as vinegar sharpness in the nose and a hard, hot finish.
Brettanomyces character
Farmyard, horse-blanket, smoky and sticking-plaster aromas from *Brettanomyces* yeast converting hydroxycinnamic acids into volatile phenols.
Oxidation
The cumulative effect of oxygen on finished cider: fruit aroma flattens, colour deepens towards amber, and a bruised-apple or sherry-like character replaces the fresh one.
Mousiness
A retronasal taint of mouse cage, stale popcorn or crackers that appears only after swallowing — and that a substantial fraction of people cannot detect at all.
Excessive astringency
A drying, roughening, mouth-puckering sensation that outstays its welcome, produced by larger phenolic polymers precipitating salivary proteins.
Film yeast growth
A pale, powdery or wrinkled film of aerobic yeast growing on the surface of a standing cider, consuming alcohol and acid and producing acetaldehyde.

- How are apples pressed for cider — The fruit is first milled to a pulp, then that pulp is squeezed — traditionally in cloth-wrapped layers under a screw or hydraulic ram, and industrially in a belt or bladder press. Whole apples cannot be pressed usefully; they must be broken first.
- How does cider ferment — Yeast consumes the sugar in apple juice and produces roughly equal masses of ethanol and carbon dioxide, along with the esters and higher alcohols that give cider much of its aroma. In a wild ferment several yeast species take turns before *Saccharomyces* finishes the job.
- What is scrumpy — Scrumpy is an informal West Country word for strong, still, usually cloudy farmhouse cider. It has no legal definition, so it describes a style expectation rather than a guaranteed method.
- What is traditional draught cider — Still or lightly conditioned cider served from a cask or a bag-in-box rather than under gas pressure, so whatever sparkle it has came from its own fermentation. It is the format most West Country farmhouse cider is sold in.
- What is dabinett — The most widely planted English cider apple: a late bittersweet with soft, full tannin that ferments into a cider needing very little added to it. Long Ashton measured it at 0.18 per cent acid and 0.29 per cent tannin.
- Can you fix a cider that has gone vinegary — Not really. Volatile acidity cannot be removed at small scale, and blending it away only dilutes it. The realistic options are to accept it, to blend a lightly affected batch into a much larger sound one, or to let it finish becoming vinegar.
