No aroma descriptors are recorded for Harry Masters’ Jersey, and for a great deal of cider fruit that is a finding rather than a gap. About Harry Masters’ Jersey

Harry Masters’ Jersey is the cultivar a Somerset grower plants when Dabinett’s biennial habit has become intolerable. It gives a comparable contribution — low acid, full but mellow tannin, decent sugar, real body — from a vigorous tree that crops far more evenly. The fruit is medium-sized, conical, and flushed dark red over yellow, and the flesh is softer than Chisel Jersey’s, which shows in the press and in the glass.

What distinguishes it in a blend is the character of its tannin rather than the quantity. The measured total sits high in the bittersweet range, but the palate impression is roundness rather than grip, and a cider carrying a large proportion of it tends to read as full and slightly sweet even when fermented dry. This makes it a good base and a poor corrector: it will not sharpen a flabby blend, and adding more of it moves the cider further in the direction it is already going.

The name preserves a real person, which is rarer in cider fruit than the naming conventions suggest. Harry Masters of Yarlington is credited by every source with raising or at least selecting it, and the association with the same Somerset parish that produced Yarlington Mill is unlikely to be coincidental — that district was doing more deliberate selection than most in the second half of the nineteenth century. Beyond the name, though, the record is the usual orchard tradition: no dated propagation, no nursery entry, no account of what he crossed if he crossed anything.
