Low acid, high tannin. The class that has no real equivalent in dessert fruit and that defines West Country cider.

Basis: Below about 0.45% w/v acid and above about 0.2% w/v tannin.

A full bittersweet at the higher-tannin end of the class, well clear of any threshold.

Aroma

No aroma descriptors are recorded for Chisel Jersey, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

Color golden amber, full English bittersweet. Barnyard character typical of English farmhouse cider. Slight citrus & fruitiness accompanied by pronounced bitterness. Very long tannic, astringent finish. Good for structure, character & complexity in a blend.

About Chisel Jersey

Chisel Jersey is what a bittersweet looks like when the tannin is allowed to dominate everything else. The fruit is small, hard, greenish-yellow flushed dull red, and the flesh is dense enough that the usual explanation for the name is that you would need a chisel to get into it. Pressed alone it gives a juice that is almost devoid of acid and full of phenolic material that grips rather than rounds.

The blending logic is straightforward: a few per cent of Chisel Jersey turns a soft, broad cider into one with a defined finish and the capacity to improve in barrel. This is a different contribution from Dabinett’s, which adds weight in the middle of the palate; Chisel Jersey adds length at the end of it. Producers who work with both tend to treat Dabinett as the base and Chisel Jersey as the correction, and to use the latter in single-figure percentages.

The tree is unremarkable to grow — moderately vigorous, moderately scab-prone, biennial like most of its neighbours — with one real advantage. The hard flesh keeps. Fruit that can sit in store for weeks without breaking down lets a small mill spread its pressing across a longer season, and that is a practical benefit that does not show up in any analysis.

The name is a small case study in how cider apple nomenclature misleads. "Jersey" is a West Country word for a full bittersweet, used across Somerset and Devon for fruit with no connection to each other or to the Channel Islands, and there are at least half a dozen Jerseys in circulation. The persistent claim that Chisel Jersey is the parent of Dabinett has no published support at all and appears to survive simply because the two are the pair of dependable full bittersweets a Somerset grower thinks of together.

Names, origin and identity

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

Attributed to the Martock district of south Somerset. "Jersey" here is the West Country term for a full bittersweet and has nothing to do with the Channel Islands; the "chisel" is usually explained by the fruit’s hard flesh, which is a plausible folk etymology rather than a documented one.
