Aroma

No aroma descriptors are recorded for Coat Jersey, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. Humid continental, with cold winters and warm summers moderated by the Finger Lakes — a sharper seasonal swing than any of the European cider regions whose fruit the collection holds, and warm enough in late summer to bring acid down faster than a maritime autumn does.

About Coat Jersey

Coat Jersey comes from the same square few miles of south Somerset as Chisel Jersey and Stembridge Jersey — the Martock and Kingsbury Episcopi district, which produced a remarkable number of named cider apples in the nineteenth century. It gives a full, soft, low-acid bittersweet juice with good sugar, and it is used the way the rest of the group is used.

The group naming is the difficulty. "Jersey" in Somerset means bittersweet, the qualifier is usually a place or a colour, and there is no guarantee that trees carrying any of these names in old orchards are what the label says. This record therefore keeps its confidence at described and attaches no analytical figures, because the honest position is that the fruit is well attested and its numbers are not.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.
