Aroma
No aroma descriptors are recorded for White Jersey, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

Maritime and mild, with wet autumns and few hard frosts — the climate the English cider cultivars were selected in, and the reason their acid and tannin figures here are the ones the rest of the world has spent a century comparing its own fruit against.

The table lists this fruit as bittersweet and prints the two figures the 1903 scheme is defined on. Read against the scheme’s own cut-offs — 0.45% acid, 0.20% tannin — those figures fall in the sweet quadrant. Both are reproduced because the disagreement is the source’s, not CiderHQ’s. Neither reading is an error. A class assigned on acid and tannin describes fruit grown somewhere, and this is somewhere else.

About White Jersey
White Jersey is one of the West Country Jerseys — a group of full bittersweets that share a name meaning "bittersweet" and share very little else that is documented. It gives a soft, full, low-acid juice from small late fruit, and in a blend it behaves like the group generally does.
Its distinguishing feature is a pale skin, which is how the name arose and which is a poor basis for identification: skin colour varies with exposure, and a shaded tree of a red-skinned Jersey can look pale. The Jersey names in old orchard records should be treated as descriptions of a type rather than as cultivar identifications.
Because of that, this record deliberately gives a lower confidence on its blend profile than the analytical range might suggest. The class is secure; the attribution of any particular figure to this particular fruit is not.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.
