Low acid, high tannin. The class that has no real equivalent in dessert fruit and that defines West Country cider.

Basis: Below about 0.45% w/v acid and above about 0.2% w/v tannin.

A mild bittersweet: above the tannin threshold but not by much, and with acid at the higher end of the class.

Aroma

No aroma descriptors are recorded for Brown Snout, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. WSU lists this fruit as bittersweet — the class it carries in England — but the juice measured at Mount Vernon falls in the sweet quadrant of the site’s own thresholds. Neither reading is an error. A class assigned on acid and tannin describes fruit grown somewhere, and this is somewhere else.

Color amber; mildly bittersweet. Stand-alone single-varietal cider; good body, balance & mouth feel; juice needs acid adjustment prior to fermentation. Easy to drink even as a single varietal. Makes a darker viscous cider. Apple, slight banana, nutty, butterscotch.

Bottled alone from time to time. It is clean and balanced for a bittersweet and has little intensity, which makes for a pleasant cider without much to say about itself.

About Brown Snout

Brown Snout is named for the patch of russet at the eye of the fruit, which is one of the more literal names in the English repertoire and, unusually, describes something you can actually see. Beyond that the apple is modest in every respect: mild tannin, moderate acid, moderate sugar, no aroma to speak of.

What makes it valuable is the tree. It is naturally small and spreading, comes into bearing quickly, and crops regularly rather than biennially — three properties that almost never occur together in cider fruit and that make it well suited to a modern bush orchard. It is also comparatively resistant to canker, which on Herefordshire clay is not a small consideration. Growers plant it for the same reasons they plant Michelin, and get slightly more character in return.

Its very late flowering deserves a note of its own. It is one of the last cider apples in England to blossom, which protects it from spring frost and simultaneously makes it a poor partner for anything else in the orchard. A block of Brown Snout needs another very late flowerer nearby, and there are not many.

The Yarkhill origin is better supported than most: this is a fruit that entered the Herefordshire nursery trade in the nineteenth century and left a paper trail, rather than one reconstructed from recollection a century later. The founding-tree story attached to Mr Dent is still tradition, but the cultivar’s distribution history is documented.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

Credited to a Mr Dent of Yarkhill and taken up by Herefordshire nurseries in the second half of the nineteenth century. The Herefordshire origin is well supported by nursery records; the founding-tree detail is the usual tradition.
