Aroma

No aroma descriptors are recorded for Brown Thorn, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. WSU lists this fruit as bittersweet — the class it carries in England — but the juice measured at Mount Vernon falls in the sweet quadrant of the site’s own thresholds. Neither reading is an error. A class assigned on acid and tannin describes fruit grown somewhere, and this is somewhere else.

About Brown Thorn

Brown Thorn is an old Herefordshire bittersweet with a russeted skin and firm tannin, used in county blends for structure. It has never been widely planted and is now grown mainly by producers and conservation orchards with an interest in the older Three Counties fruit.

Its name causes routine confusion with Brown Snout, which is a quite different and far more widely grown Herefordshire apple. A listing that reads "Brown" and a county is not enough to identify either.

Names, origin and identity

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

A Herefordshire cider apple of unrecorded origin. The name may refer to the russeted skin and to a thorn hedge where the seedling was found, which is a common pattern and not documented here.
