Blending is what almost all cider does; the record exists because several traditions treat the blend as the craft itself and because appellation specifications frequently prescribe blend composition. There is no framework certifying a cider as blended.
What makes it this style
- Juice or finished cider from more than one source is combined to reach a target the components could not reach alone.
- The blend is judged as a whole; a component that is unbalanced on its own may be exactly what the blend needs.
- Blending may happen at juice, at mid-ferment or at finished cider, and the three give different results from the same materials.
- Where a designation prescribes proportions of fruit classes, the blend is built to that specification.
What varies inside the category
Every style covers a range. This is what legitimately differs between two examples that are both correctly called by this name.
- Whether components are blended as juice, which lets them ferment together, or as finished ciders, which preserves each component’s ferment character.
- Whether vintages are blended. A multi-vintage house blend prioritises consistency; a single-vintage blend prioritises the year.
- How prescriptive the framework is. Several French appellations set minimum proportions by fruit class; English practice sets none.
- Scale. A farm blending four vats and a plant blending hundreds are doing the same operation for very different reasons.

About Blended cider
Blending is where cider is actually decided. Fermentation converts what is in the vessel; blending chooses what is in the glass. A maker with a dozen fermented parcels has a far larger design space than a maker with one, and the traditional English, French and Asturian cider houses all treat the assembling of the blend, not the pressing or the ferment, as the skilled act.
The reasons are structural. Cider apples are mostly specialists. Bittersweets bring tannin, body and low acid but leave a blend with a high pH and no lift; sharps bring acid that both brightens the palate and lowers the pH into a microbiologically safer range; sweets bring sugar and softness and little else. A blend built from all three does something none of them can do alone, and the fact that the classification systems themselves are organised around blending contribution rather than around eating quality reflects that.
Timing changes the outcome. Juice blended before fermentation ferments as one liquid: the components interact throughout, the yeast population is shared, and the result is integrated but no longer separable. Finished ciders blended after fermentation each carry their own ferment signature, and the blend is a composite rather than a fusion. Some houses do both, fermenting a base blend and adjusting it at the end, which is why bench trials on small samples are a standard part of the craft.
The word also carries a commercial meaning that is worth separating. In large-scale production, blending is primarily a consistency tool: the aim is that this year’s product matches last year’s, which requires holding stock across seasons and deliberately averaging out vintage variation. That is a legitimate use of the same operation, and it is the opposite intention from a small producer blending to make the most of a particular year. The technique is shared; the purpose is not.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Whether the components have integrated or are still legible as parts. A blend that reads as two ciders in a glass was assembled recently or badly.
- Balance across acid, tannin and body, which is what the blend was for. A blend that is not more balanced than its components has failed at its only job.
- Whether anything has been lost. Blending averages, and a blend can be balanced and less interesting than its most distinctive component.
What gets misread
- Reading blending as a cost-saving measure. Almost all good cider is blended, and blending late from separately fermented components is the practice that most distinguishes a producer from a hobbyist.
- Assuming a blend is made from equal parts. Proportions are the decision, and a five per cent component can be the one doing the work.
Around 10–12 °C. A blend is an argument about balance, and balance is temperature-dependent: the same blend read cold and read warm shifts its emphasis from acid towards sweetness and body.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Single varietal cider — The label, and the thresholds behind it. Several markets permit a minority of other fruit under a varietal name.
- A co-fermented mixed press — When the decision was taken. Co-fermentation blends the fruit before anyone knows what it will give; blending proper defers the choice until the components can be tasted.

Blending
Combining separate lots of cider or perry into one, which in cider is the historically normal way of making the drink rather than a remedy applied when single lots disappoint.
Bench blending trials
Making small measured mixtures of candidate lots and tasting them before committing tanks, because how components behave together cannot be worked out from how they taste apart.
Acid balancing
Bringing a cider to the sharpness it needs, which requires separating perceived sharpness from titratable acidity from pH — three related things that do not move together.
Tannin balancing
Setting the phenolic structure of a blend, which means handling bitterness and astringency separately because they are different perceptions produced by different sizes of the same molecules.
Juice blending
Combining juices from different cultivars before fermentation so that the blend ferments as a single batch, as against fermenting separately and blending later.
Vintage and non-vintage blending
The choice between bottling a single season as it came and carrying stock across years to hold a house character steady, and what each choice costs.

Faults this style is particularly exposed to, given how it is made.
Low acidity
A cider without enough acid to give it definition, tasting soft, heavy and dull — and sitting at a pH that leaves it exposed to spoilage organisms.
Thin body
A cider with no weight or texture in the mouth, most often from over-watered pomace, low-gravity juice or a blend with nothing to give it substance.
Excessive astringency
A drying, roughening, mouth-puckering sensation that outstays its welcome, produced by larger phenolic polymers precipitating salivary proteins.

Single-varietal cider
Cider made wholly or overwhelmingly from one apple cultivar, presented so that the fruit’s own character is the subject of the drink.
Vintage cider
Cider from the fruit of a single named harvest, made and sold as an expression of that season rather than of a house style.
Three Counties cider
The shared cider and perry tradition of Herefordshire, Gloucestershire and Worcestershire, defined by a common fruit inventory and by the perry pear orchards that survive nowhere else in comparable numbers.
Cidre Pays d’Auge
The controlled appellation cider of the Pays d’Auge in Calvados, made by keeving from bitter Norman fruit and bottle-conditioned to a low alcohol and a high residual sugar.
Modern mainstream cider
The industrially produced, consistent, carbonated cider that accounts for most of what is sold worldwide, generally made partly from concentrate and finished to a fixed specification.
