An appellation d’origine contrôlée is the most demanding tier of French origin protection. Its cahier des charges prescribes the delimited area, permitted cultivars, orchard practice, pressing, fermentation duration and finished composition, and compliance is inspected. It is a legal specification, not a stylistic recommendation.

About Cidre Pays d’Auge
The Pays d’Auge is the small stretch of Calvados between the Touques and the Dives where Normandy’s cider tradition is at its most codified, and its appellation is the strictest specification applied to cider anywhere. What it protects is not a flavour but a way of working: particular orchards, particular fruit, whole-juice pressing, clarification before fermentation, a long slow ferment and a finish in bottle.
Keeving is the technical centre of it. The milled fruit is macerated so that the pulp’s enzymes begin de-esterifying the pectin, the juice is pressed and held cool, and a brown pectin cap forms and floats, taking with it the nitrogen the yeast would need to finish the job. The bright juice drawn from beneath ferments slowly for months and stops with a great deal of sugar unconverted. That is not a failure of fermentation; it is the object of the exercise, and the appellation is written around it.
The fruit is what makes the result work. Pays d’Auge cultivars are dominated by the bitter and bittersweet classes — amère and douce-amère — carrying phenolic loads that would be considered high even by West Country standards, with very little acid. In a dry cider that fruit would be austere. Against a substantial residual sugar it produces the appellation’s characteristic architecture: sweetness and bitterness in opposition, with almost no acidity mediating between them.
The wild fermentation contributes the rest. The ciders carry ferment-derived aromas that a technically clean producer elsewhere would work to eliminate — barnyard, leather, a phenolic edge from Brettanomyces, sometimes a lactic softness — and the tradition treats a good deal of this as intrinsic rather than accidental. Where an English competition judge might mark it down, an Auge producer would say the cider tastes of where it is from.
A drinker meets a cider of striking presence at very low strength: bronze, hazy, gently sparkling, sweet on the front palate and bitter on the finish, with a savoury aromatic complexity that has no equivalent in the English or Spanish traditions. It is the clearest available demonstration that low alcohol and low acidity need not mean a slight drink.

What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- The consequences of a stricter specification. The Pays d’Auge AOC narrows the area and tightens the rules relative to the wider Normandy appellation, and what a taster meets as a result is a narrower range: less variation in strength, in sweetness and in how the carbonation was arrived at.
- Keeved sweetness carried on bittersweet tannin, which is the regional signature and is a texture as much as a flavour. Keeving strips the nitrogen the yeast needs, so the ferment stops with sugar still in it — the sweetness was never added and it sits underneath the tannin rather than in front of it.
- Bottle conditioning, which the specification requires. Expect a deposit, a fine persistent bead, and a faint bready note over the fruit; a bright, clean, uniformly gassy example has been made another way.
- Bitterness and astringency as separate readings. Norman bittersweet fruit gives a good deal of both, and the balance between them — a bitterness that arrives early against a grip that builds in the finish — is what distinguishes examples more than any flavour descriptor.
What gets misread
- Reading it as a premium version of Normandy cider. It is a smaller, older appellation with different rules rather than a grade, and nothing in the specification is a quality guarantee — appellations constrain method and origin, not outcome.
- Expecting acid. The Norman bittersweet fruit is low in acid and high in phenolics, so what reads as structure here is tannin rather than sharpness. A palate that arrives expecting an English sharp or an Asturian natural will find this soft and read the tannin as heaviness.
- Reading the low alcohol as a light cider. It is a cider whose fermentation was deliberately arrested with sugar still in it, which is the opposite of light: the body and the sweetness are both higher than the strength suggests.
Cellar temperature rather than cold — around 10–12 °C — in a glass with a bowl. Chilling suppresses the aroma and the sweetness while leaving the tannin untouched, which turns a balanced example bitter.

One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Cidre de Normandie — Area and specification. Pays d’Auge is a stricter appellation within the same region.

Standard orchard systems
Widely spaced, tall-trunked, long-lived fruit trees over grassland — a family of related but genuinely different systems running from the Three Counties through Normandy to the Austrian meadows.
Maceration
Holding milled pomace before pressing so that phenolics, aroma precursors and pectin have time to move out of the solid tissue and into the juice.
Keeving
Forming a floating pectin gel that lifts nutrients and solids out of the juice, so that the ferment starves before it finishes and leaves natural sweetness behind.
Wild fermentation
Letting the microflora already present on the fruit and in the press house carry the ferment, in a succession rather than as a single organism.
Bottle conditioning
Carbonating cider by letting a second fermentation finish inside the sealed bottle, so the gas is generated where it is going to stay.
Lees ageing
Deliberately holding a cider or perry on its fine yeast deposit so that autolysing cells release material that changes texture and foam behaviour.

Calvados Pays d’Auge
The Pays d’Auge appellation for Calvados, restricted to the same Norman district as the cider appellation and requiring double distillation in a pot still.

- Camembert — Pays d’Auge ciders are typically fuller, more tannic and more oxidative than the wider Normandy category, which suits a fully ripe camembert where a lighter cider would be lost.
- Duck — Duck carries more subcutaneous fat than any other bird here and a dark, iron-tinged meat that takes tannin well; the fuller Norman styles bring both the acid and the structure, and duck with cider is standard practice in the region.
- Pont-l’Évêque — The cheese and the cider come from the same corner of the Pays d’Auge, and washed-rind cheeses in this region have historically been washed with cider or cider brandy, so the aromatic overlap has a physical cause rather than a coincidental one.
- Livarot — Livarot is one of the most pungent cheeses of the region and needs a cider with real tannin, body and length; the structured Pays d’Auge style is the local answer and a mechanically sound one.
- Tripe — A fuller Norman cider stands up to the long-cooked depth of the dish while remaining local to it.

Farmyard, horse-blanket, smoky and sticking-plaster aromas from *Brettanomyces* yeast converting hydroxycinnamic acids into volatile phenols.
Volatile acidity
The measurable fraction of acidity that can be steam-distilled off, dominated by acetic acid and read as vinegar sharpness in the nose and a hard, hot finish.
Unwanted refermentation
Fermentation restarting in a sealed container, generating carbon dioxide that was not planned for and pressure that a bottle may not withstand.
Mousiness
A retronasal taint of mouse cage, stale popcorn or crackers that appears only after swallowing — and that a substantial fraction of people cannot detect at all.

The Cidre Pays d’Auge cahier des charges was read in full on 2026-08-24, in the version homologated by arrêté of 17 January 2026 and published in the Journal officiel on 21 January. That qualification is not decoration. A revision adopted by the Comité national on 10 September 2025 is currently under the procédure nationale d’opposition, is clearly marked as not prejudging the final text, and specifies carbonation differently from the text in force — as grams of CO2 per litre rather than as a minimum pressure in bar. A summary citing the draft would have put a figure on the page that no producer is held to. CiderHQ records the operative text and says which one it is.

Opened on 2026-08-24, and it turned out that the entry CiderHQ had was describing a repealed instrument. The décret of 20 February 2025 replaces the 1953 décret and the 1987 one that amended it, and it changes the thing this site had been repeating: the doux, demi-sec and brut categories are no longer residual-sugar bands. They are now defined on acquired alcoholic strength together with density at 20 °C, an extra-brut tier has been added, and the four bands deliberately overlap so that a producer can place a product with a hydrometer rather than a sugar analysis. The pages that said otherwise have been corrected. What could not be done is a verbatim read: legifrance.gouv.fr returns HTTP 403 to retrieval, so the text was read through a summarising fetch and every operative figure was then checked independently against the UNICID interbranch briefing, which reproduces the table. The two agree.
