Cidre de Normandie is an IGP: an origin protection with a specification covering the production area, permitted fruit and method. It is a broader and less demanding instrument than the AOC that governs Pays d’Auge within the same region, and the two should not be treated as the same level of protection.

About Cidre de Normandie
Normandy cider is built on a different premise from English cider, and the premise is about sugar. Where the English tradition ferments juice to dryness and then decides what to do about sweetness, Normandy practice aims to arrive at a cider that never finished fermenting — a drink that is low in alcohol, high in residual sugar, and holds its fruit because the fruit’s sugar is still there. Everything else about the tradition follows from that intention.
The fruit is chosen accordingly. Normandy’s cultivars are classified under the French five-way system, and the categories that dominate are douce-amère and amère: low-acid, high-tannin fruit, in some cases more tannic than anything in the English inventory. Sharp and acid classes appear in small proportions to keep the pH in a safe range. The resulting juice is rich in phenolics and low in acid, which is exactly what a sweet cider needs, since bitterness rather than acidity is what stops the sugar from cloying.
Method reinforces it. Maceration of the milled pomace before pressing extracts phenolics and, importantly, allows the fruit’s own pectin methylesterase to begin working. Keeving, where used, clarifies the juice and strips its nitrogen so the ferment cannot run to completion. A long cold fermentation follows, often through the winter, and the cider is bottled while sugar remains, finishing its carbonation in glass.
The regulatory picture inside Normandy has two levels and conflating them is a common error. The IGP Cidre de Normandie covers a large area with a relatively permissive specification. The AOC Cidre Pays d’Auge covers a much smaller district within it with a stricter one, and the AOP Cidre Cotentin covers another. An IGP bottle and an AOC bottle from the same region are not making the same claim.
In the glass, a typical example is amber to bronze, cloudier than most English cider, with a soft bead, an aroma running to cooked and bruised apple with a farmyard edge from the wild ferment, and a palate where evident sweetness sits against firm bitterness. The alcohol is low enough to surprise anyone expecting a cider at five or six per cent.

What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Sweetness that arrived without being added. Norman practice rests on keeving and on a nitrogen-limited ferment, so a residual sweetness with a low alcohol is the signature.
- The relationship between sweetness and tannin. Norman fruit is bittersweet, so unlike most sweet cider this one has phenolic structure underneath the sugar.
- Bottle carbonation, which in this tradition is usually natural rather than added.
What gets misread
- Reading the low alcohol as weak. It is what the sweetness cost, and the appellation rules assume it.
- Expecting the acid of a Spanish or eastern-counties cider. Norman fruit is not acidic and the balance is arrived at differently.
Cool but not cold, in a bowl glass or the traditional bolée. Cold suppresses the aromatic sweetness the style is built on.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Cidre du Pays d’Auge — A stricter AOC inside the same region, with a narrower area and tighter production rules.
- Cidre de Bretagne — Fruit and balance. Breton cider generally carries more acid and less of the keeved sweetness.
- Keeved cider — A method against a place. Keeving is the technique; this is a region whose practice rests on it.

Maceration
Holding milled pomace before pressing so that phenolics, aroma precursors and pectin have time to move out of the solid tissue and into the juice.
Keeving
Forming a floating pectin gel that lifts nutrients and solids out of the juice, so that the ferment starves before it finishes and leaves natural sweetness behind.
Juice settling
Letting freshly pressed juice stand cold and undisturbed so that gross solids fall, then racking the cleaner juice off the deposit before pitching.
Wild fermentation
Letting the microflora already present on the fruit and in the press house carry the ferment, in a succession rather than as a single organism.
Bottle conditioning
Carbonating cider by letting a second fermentation finish inside the sealed bottle, so the gas is generated where it is going to stay.
Blending
Combining separate lots of cider or perry into one, which in cider is the historically normal way of making the drink rather than a remedy applied when single lots disappoint.

Cidre de Normandie / Cidre normand
The protected geographical indication covering cider made in Normandy and a defined margin around it, the broadest of the French cider designations by volume and by area.
Cidre du Pays d’Auge
The strictest French cider appellation: a closed area, a closed variety list, a mandated blend balance, compulsory maceration and pectic settling, and a sparkle that may only come from fermentation finishing in the bottle.
Cidre du Cotentin
The appellation of origin for cider from the Cotentin peninsula, built on a small group of local bitter varieties and the most recently recognised of the Norman cider appellations.

- Camembert — The cheese and the cider are made on the same ground from the same farming system, and the mechanism supports the custom: bittersweet-derived tannin takes up what casein it can reach, acid and bubble clear the butterfat, and the cider’s own farmyard-adjacent aromas run alongside the rind’s.
- Pont-l’Évêque — The broader Norman category does the same work: enough acid and carbonation for a rich supple paste, enough tannin and body to meet the rind.
- Neufchâtel — A Norman cheese from the Pays de Bray with Norman cider: the acid clears a rich but not heavy paste, and neither side outweighs the other.
- Tripe — *Tripes à la mode de Caen* is cooked with cider, so the drink and the cooking liquor share their aromatic material directly; the acidity also lifts a dish whose texture is gelatinous and whose flavour is long and low.

Faults this style is particularly exposed to, given how it is made.
Unwanted refermentation
Fermentation restarting in a sealed container, generating carbon dioxide that was not planned for and pressure that a bottle may not withstand.
Brettanomyces character
Farmyard, horse-blanket, smoky and sticking-plaster aromas from *Brettanomyces* yeast converting hydroxycinnamic acids into volatile phenols.
Volatile acidity
The measurable fraction of acidity that can be steam-distilled off, dominated by acetic acid and read as vinegar sharpness in the nose and a hard, hot finish.
Stuck fermentation
A fermentation that has stopped before the sugar is gone and will not restart, leaving a sweet, low-alcohol cider that is vulnerable to everything.

- How does cider ferment — Yeast consumes the sugar in apple juice and produces roughly equal masses of ethanol and carbon dioxide, along with the esters and higher alcohols that give cider much of its aroma. In a wild ferment several yeast species take turns before *Saccharomyces* finishes the job.
- Why did my cider stop fermenting — The usual causes are a shortage of yeast-available nitrogen, a temperature that has dropped, too much sulphite at the start, or a yeast that has reached its alcohol limit. Check the gravity before assuming anything is wrong: many ciders simply finish.
- What is keeved cider — A cider made naturally sweet by starving the yeast rather than by adding sugar. Keeving strips nutrients out of the juice before fermentation, so the ferment slows and stops with fruit sugar still in it, and nothing has been put back.
- Can you fix a cider that has gone vinegary — Not really. Volatile acidity cannot be removed at small scale, and blending it away only dilutes it. The realistic options are to accept it, to blend a lightly affected batch into a much larger sound one, or to let it finish becoming vinegar.

The Cidre Pays d’Auge cahier des charges was read in full on 2026-08-24, in the version homologated by arrêté of 17 January 2026 and published in the Journal officiel on 21 January. That qualification is not decoration. A revision adopted by the Comité national on 10 September 2025 is currently under the procédure nationale d’opposition, is clearly marked as not prejudging the final text, and specifies carbonation differently from the text in force — as grams of CO2 per litre rather than as a minimum pressure in bar. A summary citing the draft would have put a figure on the page that no producer is held to. CiderHQ records the operative text and says which one it is.

Opened on 2026-08-24, and it turned out that the entry CiderHQ had was describing a repealed instrument. The décret of 20 February 2025 replaces the 1953 décret and the 1987 one that amended it, and it changes the thing this site had been repeating: the doux, demi-sec and brut categories are no longer residual-sugar bands. They are now defined on acquired alcoholic strength together with density at 20 °C, an extra-brut tier has been added, and the four bands deliberately overlap so that a producer can place a product with a hydrometer rather than a sugar analysis. The pages that said otherwise have been corrected. What could not be done is a verbatim read: legifrance.gouv.fr returns HTTP 403 to retrieval, so the text was read through a summarising fetch and every operative figure was then checked independently against the UNICID interbranch briefing, which reproduces the table. The two agree.
