Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
The Cotentin is a peninsula pushed out into the Channel and takes weather from three sides. Winters are among the mildest in northern France and frost is rare near the coast, but wind is constant and salt-laden, and it is the wind rather than the cold that limits where fruit can be grown. Rainfall is high and humidity relentless, so disease pressure is severe and fruit must be well ventilated to stay sound. Summers are cool, which means slow ripening, late harvest and juice that reaches only moderate sugar. The characteristic response in the landscape is the bocage: a dense grid of banked hedges enclosing small fields, which is a windbreak system as much as a field boundary, and orchards sit inside those enclosures rather than in open ground. Fruit grown this way develops phenolics well while accumulating sugar slowly.
Soils
Acid, often shallow soils over granite, schist and sandstone, in contrast to the deep clays of eastern Normandy. They are less fertile, which reinforces the low-nutrient condition of the juice, and they drain more freely on the higher ground.
The orchards
How the fruit is actually grown here — tree form, planting, what else the ground is used for, and who owns it.
- Orchards are enclosed within the banked hedges of the bocage, in small parcels rather than in large blocks, with shelter as the governing consideration in siting.
- High-stemmed standard trees over grazed grass are the traditional form, worked within mixed livestock farms.
- The variety palette leans strongly towards bitter and bittersweet fruit, and the region’s cider is correspondingly more tannic than cider from eastern Normandy.
- Tree health management matters more here than further east because constant humidity and wind damage together create entry points for canker.
- The peninsula also has a long-standing distilling tradition, and fruit destined for spirit has supported orchard maintenance where cider alone might not have.

History
How cider making here came to take the shape it has.
- The Cotentin developed its cider tradition on the same medieval and early modern trajectory as the rest of Normandy, but in relative isolation: the peninsula was slow to be connected by road and rail, and its fruit and practice diverged.
- A distinct local variety population developed as a result, adapted to wind exposure and to acid granite soils rather than to the clays of the Auge.
- The region gained appellation protection for its cider considerably later than the Pays d’Auge, and the recognition formalised a style that was already understood locally as drier and more bitter than the Norman standard.
- Twentieth-century orchard loss was severe here as elsewhere, compounded by war damage across the peninsula in 1944.
- Farm production and direct sale remain the backbone of the sector, with relatively little large-scale industrial capacity based on the peninsula itself.
Culture
What the drink is for here, and the occasions and rooms it belongs to. This is not decoration around the cider — in several of these places it is the part that decides how the cider is made.

About Cotentin
The Cotentin makes the driest and most tannic cider in Normandy, and the reason is written into the landscape. This is a granite peninsula in constant wind, with acid soils and a cool, wet, salt-laden climate. Fruit here accumulates sugar slowly and phenolics readily, and the varieties that survived selection are weighted towards the bitter and bittersweet end of the French classification.
The bocage is the enabling technology. A dense network of banked hedges divides the peninsula into small sheltered enclosures, and orchards sit inside them. Remove the hedges and the orchards become unviable, which is why hedgerow loss and orchard loss are the same conversation here and why conservation of the two is handled together.
The cider that results reads as a deliberately different proposition from Pays d’Auge cider. It carries more bitterness and grip, finishes drier, and generally shows less of the sweet, rounded, slightly oxidative character that a keeved Auge cider offers. Both are keeved traditions working from bittersweet fruit; the difference is in the fruit palette, the soil fertility and the length of the season.
Appellation recognition arrived later here than in eastern Normandy, and its effect has been to formalise a style rather than to create one. The peninsula’s production remains dominated by farm-scale makers selling locally, with relatively little industrial capacity, which is a fair description of the sector rather than a claim about its quality.

The Cidre Pays d’Auge cahier des charges was read in full on 2026-08-24, in the version homologated by arrêté of 17 January 2026 and published in the Journal officiel on 21 January. That qualification is not decoration. A revision adopted by the Comité national on 10 September 2025 is currently under the procédure nationale d’opposition, is clearly marked as not prejudging the final text, and specifies carbonation differently from the text in force — as grams of CO2 per litre rather than as a minimum pressure in bar. A summary citing the draft would have put a figure on the page that no producer is held to. CiderHQ records the operative text and says which one it is.

Opened on 2026-08-24, and it turned out that the entry CiderHQ had was describing a repealed instrument. The décret of 20 February 2025 replaces the 1953 décret and the 1987 one that amended it, and it changes the thing this site had been repeating: the doux, demi-sec and brut categories are no longer residual-sugar bands. They are now defined on acquired alcoholic strength together with density at 20 °C, an extra-brut tier has been added, and the four bands deliberately overlap so that a producer can place a product with a hydrometer rather than a sugar analysis. The pages that said otherwise have been corrected. What could not be done is a verbatim read: legifrance.gouv.fr returns HTTP 403 to retrieval, so the text was read through a summarising fetch and every operative figure was then checked independently against the UNICID interbranch briefing, which reproduces the table. The two agree.
