Two distinct hazards apply. Livestock allowed access to fallen fruit can choke on whole apples or pears and can develop rumen acidosis from gorging, so stock are normally excluded before the crop begins to drop rather than after. Separately, fruit gathered off ground that livestock have occupied carries a faecal contamination risk, which is why ground-collected fruit is washed and why unpasteurised juice made from it warrants particular care; check the requirements that apply in your jurisdiction.
What it is
Running livestock among fruit trees turns the orchard floor from a cost into a crop. Sheep, cattle, geese, poultry and historically pigs have all been used, and the arrangement carries a set of conditions: the tree heads must be above browsing height, young trunks must be guarded, stock have to be off the orchard well before fruit begins to fall, and the ground must not be poached to mud around the trunks in a wet autumn. Where those conditions are met, the same hectare produces fruit and meat, milk or wool; where they are not, the livestock will damage the orchard faster than the orchard can recover.
Why it is used
- The sward beneath widely spaced trees is a genuine forage crop, and grazing converts it to a return without the fuel and machinery cost of mowing.
- Stock keep the grass short into the autumn, which is what makes gathering fruit off the ground practical in orchards harvested that way.
- Grazing animals return nitrogen and other nutrients to the orchard in dung and urine, offsetting part of what the sward removes from the trees.
- A second enterprise on the same ground spreads risk across a biennial fruit crop, which is one of the reasons the arrangement persisted on mixed farms.
How it works
- Livestock strip bark and browse foliage to the height they can reach, so the whole system depends on the clear stem built during formative training and on guards while that stem is young.
- Grazing removes the leaf area of the sward and therefore its competitive draw on soil water and nitrogen, and dung and urine return a proportion of the nutrients in a rapidly available form.
- Cattle exert far higher point loads than sheep, so on heavy soil in wet weather they compact and poach the ground around trunks, damaging surface roots where the tree most needs them.
- Fruit lying in a grazed orchard is eaten readily, and stock gorging on windfalls risk both choking on whole fruit and acidosis from a sudden load of fermentable sugar in the rumen.

The grazing animal is what distinguishes the traditional systems from each other, and the differences are practical rather than decorative. In Herefordshire, Gloucestershire, Worcestershire and Somerset the usual stock is sheep, with cattle on some holdings; heads are raised accordingly, the sward is grazed through much of the year, and stock come off before the crop falls. In the Normandy pré-verger the animal is the dairy herd and the pasture is the primary enterprise, so the trunk specification is much more demanding, individual tree protection is heavier and longer-lived, and tree density is held down to keep the grass productive. In the Austrian and Bavarian Streuobst meadow the first cut is usually hay and grazing takes the aftermath, with the timing set partly to protect the meadow flora rather than only to feed stock.
Asturian pomarada practice sits apart from all of these. The sward matters there because it is the surface the fruit is gathered from, and the management priority is a short, clean floor at harvest rather than a grazing regime that runs into autumn. Geese and poultry appear across several traditions as a lighter alternative: they eat fallen fruit and some pest larvae, do not strip bark, and impose almost no compaction, though they do the least to control a vigorous sward. Pigs were historically turned into orchards to clear windfalls after the crop was gathered, which suited a system where the fallen fruit was waste rather than a harvest, and is incompatible with one where the ground crop is collected and pressed. The choice of animal is therefore downstream of how the fruit is picked, not merely of what the farm happens to keep.
What goes wrong is predictable and mostly avoidable. Cattle put into an orchard whose heads were raised for sheep will reach and break the lower fruiting wood and rub against the trunks until the guards fail. Stock left on into the drop will eat the crop, injure themselves on it and contaminate the fruit that remains. Heavy stock on wet clay will poach the ground into a ring of compacted mud around every trunk, which is precisely where surface roots and the collar are most vulnerable to waterlogging and to Phytophthora. The arrangement works when the stocking rate, the animal and the calendar are all matched to the orchard, and it degrades quickly when any one of the three is treated as flexible.
