What it is
The ground beneath the trees is managed, not left. Floor management covers the composition of the sward, whether there is a clear strip under the trees and how it is kept clear, how often the alleys are mown and when, whether mulch or compost is applied, and how all of that is timed against bloom, frost nights and harvest. In a bush orchard it is a working surface that also competes with the trees for water and nitrogen. In a traditional orchard it is simultaneously a forage crop, the harvesting floor and, in many cases, the most botanically interesting part of the site.
Why it is used
- Grass rooting into the same shallow soil as the trees competes for water and nitrogen, and keeping a clear strip beneath young trees is one of the most reliable ways to improve their establishment and early growth.
- A permanent grassed alley carries machinery and stock without the soil damage that bare cultivated ground suffers, and holds the structure of a heavy soil together over decades.
- Where fruit is collected off the ground, the sward has to be short and clean at harvest, or fruit is lost, contaminated with soil and left in wet grass where rot spreads.
- The sward is the main influence a grower has on the nitrogen supply to the trees, which in cider carries directly through to the nitrogen content of the juice.
How it works
- Grass takes up soil nitrogen efficiently and holds it in a cycling pool of roots and litter, so a vigorous sward reduces the nitrogen available to the trees and lowers the amino acid and ammonium nitrogen in the fruit and therefore in the juice.
- Yeast assimilable nitrogen in the juice is what a fermentation runs on, so a low-nitrogen orchard floor regime shows up in the cellar as sluggish or stuck ferments and as hydrogen sulphide production under nitrogen stress.
- Long grass shades and insulates the soil surface, reducing the heat it stores by day and releases at night, which measurably worsens conditions in the canopy on a radiation frost night.
- A dense sward also holds moisture at fruit level and harbours the mummies and fallen leaves that carry rot and scab inoculum through the winter, so mowing and leaf breakdown are disease measures as well as tidiness.

Yeast-assimilable nitrogen
The nitrogen a yeast can actually use, which apple juice is chronically short of — the shortage behind both stuck fermentations and rotten-egg aromas, and the shortage keeving deliberately makes worse.
Ammonium nitrogen
The nitrogen form yeast takes up fastest and the one most nutrient additions supply, useful for rescuing a ferment and a poor substitute for a properly balanced juice.

Nitrogen deficiency character
The set of characters a nitrogen-starved fermentation produces together — sulphide, a stalled or dragging ferment, harsh higher alcohols and a thin, hard cider.

A fermentation that is still moving but far more slowly than it should, extending the period during which the cider is weak, sweet and exposed.
Hydrogen sulphide
A rotten-egg or drain smell from hydrogen sulphide produced by stressed yeast, usually the first visible consequence of a nitrogen-short juice.
More on orchard floor management
The link between the orchard floor and the fermentation is the part most often missed, and it is well documented. Cider apples grown in permanent grass on low-input orchards commonly yield juice with low assimilable nitrogen, and low-nitrogen juice ferments slowly, is prone to sticking, and produces hydrogen sulphide when the yeast runs short of nitrogen mid-ferment. Some makers regard the resulting slow, cool, nitrogen-limited fermentation as characteristic of traditional cider and manage around it; others treat it as a defect to be corrected, either in the orchard by adjusting the sward and nutrition or in the cellar by adding nutrient. Both are defensible positions, but they should be taken deliberately rather than discovered halfway through a ferment.
Traditions differ in what the floor is for. In Asturian and Basque orchards, and in much of Normandy, the sward is above all the surface from which fruit is gathered, so it is cut short before harvest and kept free of obstruction. In the Austrian and Bavarian Streuobst meadow the sward is a hay crop and a species-rich grassland of conservation interest in its own right, managed with a late cut and deliberately low fertility — which caps what the trees receive and is accepted as part of the system. In English and Welsh traditional orchards the floor is grazed pasture for most of the year, and its condition is set by the stock rather than by a mower. In modern bush blocks it is a mown alley and a herbicide or mechanically maintained tree strip, managed for access and for reduced competition.
The tension that has no clean resolution is between yield and biological interest. Old orchard grassland that has never been ploughed, reseeded or heavily fertilised supports waxcap fungi, anthills and a flora that improved pasture does not, and that is a direct consequence of the low fertility and long continuity that also limit the trees. Fertilising the sward, reseeding it or applying herbicide across the whole floor will grow more fruit and will remove that interest, probably permanently. Reasonable practice on a traditional orchard is usually a compromise — clear strips only under young trees, low or no fertiliser on old grassland, mowing timed after flowering of the sward and before harvest — but it is a compromise, and pretending it costs nothing in yield is not honest.
