The fermier label indicates that the product was made on the farm from that farm’s own fruit. It carries expectations in French food law across many product categories and is not a geographical appellation; a cidre fermier may also hold an AOC or IGP, or neither.

About Cidre fermier
French food vocabulary distinguishes fermier products across many categories — cheese above all — and the word carries a specific meaning: made on the farm, by the farmer, from the farm’s own raw material. Applied to cider it identifies a mode of production rather than a place or a recipe, and it sits alongside the geographical appellations rather than competing with them.
What it predicts in practice is a set of correlated choices. A farm working its own orchard presses what the orchard gives, which means the blend changes with the season and with which trees cropped. It ferments spontaneously, because buying yeast for a few thousand litres is neither necessary nor traditional. It bottles unfiltered and lets the cider condition in glass. It sells to people who come to the farm, which removes the commercial pressure towards consistency that shapes industrial production.
The orchards themselves are part of the definition. The Norman and Breton farm landscape is one of tall standard trees over grazed pasture — cattle beneath, fruit above — a system that produces both milk and cider from the same hectare and that has shaped the appearance of the countryside for centuries. Intensive bush orchards exist in France too, but they belong to a different production model and generally not to this one.
For a drinker, the honest expectation is variability in both directions. At one end, farm cider has a depth and a sense of place that no industrial process reproduces; at the other, it carries the faults that unmanaged spontaneous fermentation produces. Buying it means accepting that range, and the tradition has always understood it that way.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Variability, which is the honest expectation of a farm-made product and is not a defect.
- Whether the fruit is the farm’s own, which is what the term claims.
- Natural carbonation and a bottle deposit, both usual and both worth handling accordingly: stand the bottle, open it cold, and pour in one movement rather than in stages.
- Whatever the cellar contributed. A farm ferment runs on the yeast population of the place, which gives a wider aromatic range than a cultured ferment and is the main reason two neighbouring holdings taste different from similar fruit.
What gets misread
- Reading fermier as a quality guarantee. It is a claim about who made it and from whose fruit, not about how well.
- Expecting consistency between bottles or between years. A farm makes what the season gave it in the volumes the orchard produced, and a run of bottles filled by hand from one vessel will vary. That is the category rather than a lapse within it.
Cellar temperature, and with some tolerance for variation between bottles. Farm cider is made in small parcels without much intervention, and two bottles from one holding may genuinely differ.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- An appellation cider — Whether a specification applies. Fermier is a description of production scale and origin rather than a controlled designation.
- West Country farmhouse cider — The nearest English equivalent in register, on entirely different fruit.

Standard orchard systems
Widely spaced, tall-trunked, long-lived fruit trees over grassland — a family of related but genuinely different systems running from the Three Counties through Normandy to the Austrian meadows.
Grazing under trees
Running livestock in an orchard so the sward becomes a second crop, with the tree protection, stock timing and food-safety rules that arrangement requires.
Maceration
Holding milled pomace before pressing so that phenolics, aroma precursors and pectin have time to move out of the solid tissue and into the juice.
Wild fermentation
Letting the microflora already present on the fruit and in the press house carry the ferment, in a succession rather than as a single organism.
Keeving
Forming a floating pectin gel that lifts nutrients and solids out of the juice, so that the ferment starves before it finishes and leaves natural sweetness behind.
Bottle conditioning
Carbonating cider by letting a second fermentation finish inside the sealed bottle, so the gas is generated where it is going to stay.

Volatile acidity

Farmyard, horse-blanket, smoky and sticking-plaster aromas from *Brettanomyces* yeast converting hydroxycinnamic acids into volatile phenols.
Mousiness
A retronasal taint of mouse cage, stale popcorn or crackers that appears only after swallowing — and that a substantial fraction of people cannot detect at all.
Unwanted refermentation
Fermentation restarting in a sealed container, generating carbon dioxide that was not planned for and pressure that a bottle may not withstand.
Oxidation
The cumulative effect of oxygen on finished cider: fruit aroma flattens, colour deepens towards amber, and a bruised-apple or sherry-like character replaces the fresh one.

- How does cider ferment — Yeast consumes the sugar in apple juice and produces roughly equal masses of ethanol and carbon dioxide, along with the esters and higher alcohols that give cider much of its aroma. In a wild ferment several yeast species take turns before *Saccharomyces* finishes the job.
- What is the difference between french cidre and english cider — French cidre is usually sweeter, weaker and more carbonated, because fermentation is arrested while sugar remains. English cider is more often fermented dry and finished still or lightly sparkling, and is stronger for it.

Opened on 2026-08-24, and it turned out that the entry CiderHQ had was describing a repealed instrument. The décret of 20 February 2025 replaces the 1953 décret and the 1987 one that amended it, and it changes the thing this site had been repeating: the doux, demi-sec and brut categories are no longer residual-sugar bands. They are now defined on acquired alcoholic strength together with density at 20 °C, an extra-brut tier has been added, and the four bands deliberately overlap so that a producer can place a product with a hydrometer rather than a sugar analysis. The pages that said otherwise have been corrected. What could not be done is a verbatim read: legifrance.gouv.fr returns HTTP 403 to retrieval, so the text was read through a summarising fetch and every operative figure was then checked independently against the UNICID interbranch briefing, which reproduces the table. The two agree.

The Cidre Pays d’Auge cahier des charges was read in full on 2026-08-24, in the version homologated by arrêté of 17 January 2026 and published in the Journal officiel on 21 January. That qualification is not decoration. A revision adopted by the Comité national on 10 September 2025 is currently under the procédure nationale d’opposition, is clearly marked as not prejudging the final text, and specifies carbonation differently from the text in force — as grams of CO2 per litre rather than as a minimum pressure in bar. A summary citing the draft would have put a figure on the page that no producer is held to. CiderHQ records the operative text and says which one it is.
