Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
The Pays d’Auge is a plateau of clay and marl dissected by short river valleys, close enough to the Channel for a thoroughly maritime regime — cool summers, mild wet winters, rain through the year and very high humidity. Frost risk is moderate, the growing season long, and heat accumulation low, so fruit ripens gradually and comes in at modest sugar with well-developed aroma. The heavy soils hold water, which keeps the grass beneath the trees growing all season and keeps nitrogen away from the fruit; the resulting low-nitrogen juice is exactly what the keeving method requires. Persistent humidity means scab and canker pressure is high and the traditional wide-spaced, high-headed orchard is in part a ventilation strategy. The same conditions that make the area good dairy country therefore also make it good cider country, and the two enterprises have always occupied the same fields.
Soils
Deep, heavy, moisture-retentive clay and clay-with-flint soils over marl and chalk. They are poor arable ground and excellent permanent pasture, which is why the landscape is grass, hedge and standard fruit tree rather than crop.
The orchards
How the fruit is actually grown here — tree form, planting, what else the ground is used for, and who owns it.
- Orchard-meadows with high-stemmed standard trees over grazed pasture are the defining form, and appellation specifications for the area’s cider are built around them.
- Trees are worked on vigorous stock and headed high, giving crowns that live for many decades and are pruned to keep the centre open in a humid climate.

History
How cider making here came to take the shape it has.
- The Pays d’Auge was the part of Normandy where cider making became most closely specified, and it was among the first French cider areas to be given protection under the appellation system.
- Its Calvados has a separate and stricter appellation requiring double distillation in a pot still, in contrast to the single-column distillation permitted elsewhere in Normandy — a distinction that has shaped which orchards were kept and what was planted in them.
- Dairying and cider making developed together on the same farms, and the area’s cheeses and its cider come from the same fields and the same agricultural logic.
- Twentieth-century orchard loss affected the area as it did the rest of Normandy, though the appellation framework gave surviving standard orchards an economic argument that they lacked in England.
- Farm-based production and direct sale remain unusually strong here, supported by a signed farm-visit route through the area.
Culture
What the drink is for here, and the occasions and rooms it belongs to. This is not decoration around the cider — in several of these places it is the part that decides how the cider is made.
- Cider is drunk with food, poured cold into wide glasses or bowls, and served at a table rather than at a bar.

About Pays d’Auge
The Pays d’Auge is a small area doing something unusual: making cider inside a legal specification that describes the orchard as well as the drink. Its appellation sets the geographical area, the varieties that may be used, the requirement that the cider be made from pure juice, and expectations about how it is fermented and conditioned. That is a different relationship between tradition and paperwork from anything in the English-speaking cider world.
The landscape explains why the specification looks as it does. Heavy clay over marl makes poor arable ground and outstanding permanent pasture, so the area has been grass, hedge, cattle and standard fruit trees for centuries. The orchard-meadow is not preserved here for sentiment; it is the sensible use of the land, and the low-nitrogen fruit it produces is what makes keeved, naturally sweet cider achievable.
The area is equally defined by distillation. Pays d’Auge Calvados is required to be twice-distilled in a pot still, where Calvados from the wider region may be made in a column still, and the difference in required method sits behind a difference in how the fruit is grown and selected. An orchard here has two possible destinations for its crop, and the more valuable one has historically underwritten the survival of the trees.
A drinker meeting Pays d’Auge cider for the first time from an English background should expect something they may not immediately read as cider: cloudy gold, softly sparkling, distinctly sweet even when labelled brut, low in alcohol, and carrying an aroma more of ripe and slightly overripe fruit than of fresh apple. None of that is a lesser version of a dry English cider. It is the intended result of a different process pursued deliberately for several hundred years.

In a wild ferment several yeast species take turns before *Saccharomyces* finishes the job.

- How do you stop cider from fermenting — By removing the yeast, by chilling, by filtering it out, by pasteurising, or by a combination — and in practice a home maker cannot reliably stop a ferment mid-way with chemicals alone. Sorbate prevents yeast multiplying but will not stop an active ferment.

The Cidre Pays d’Auge cahier des charges was read in full on 2026-08-24, in the version homologated by arrêté of 17 January 2026 and published in the Journal officiel on 21 January. That qualification is not decoration. A revision adopted by the Comité national on 10 September 2025 is currently under the procédure nationale d’opposition, is clearly marked as not prejudging the final text, and specifies carbonation differently from the text in force — as grams of CO2 per litre rather than as a minimum pressure in bar. A summary citing the draft would have put a figure on the page that no producer is held to. CiderHQ records the operative text and says which one it is.

Opened on 2026-08-24, and it turned out that the entry CiderHQ had was describing a repealed instrument. The décret of 20 February 2025 replaces the 1953 décret and the 1987 one that amended it, and it changes the thing this site had been repeating: the doux, demi-sec and brut categories are no longer residual-sugar bands. They are now defined on acquired alcoholic strength together with density at 20 °C, an extra-brut tier has been added, and the four bands deliberately overlap so that a producer can place a product with a hydrometer rather than a sugar analysis. The pages that said otherwise have been corrected. What could not be done is a verbatim read: legifrance.gouv.fr returns HTTP 403 to retrieval, so the text was read through a summarising fetch and every operative figure was then checked independently against the UNICID interbranch briefing, which reproduces the table. The two agree.
